NBR: Bakers, please help!

Ok, so I’m baking stuffed sweet potatoes for dinner tonight and the recipe says I only need half of the inner flesh and the rest I can “save for something else.” Well…I have the following items at my disposal in addition to a wee bit of extra sweet potato filling (just enough from 2 medium potatoes):

Pumpkin puree
Unsweetened vanilla almond milk
Pumpkin pie spice
Eggs
Ginger snaps
Butter
Brown sugar
All the other “normal” baking accoutrements one may need (no condensed milk though…hence why I included that I have the almond milk)

Using these ingredients and any others that you think I may have (like I said...I usually stock all the essentials since I love to bake), someone, anyone, write me a sweet potato pumpkin pie with ginger snap crust recipe. Or give me ideas. Post haste.  Because now...that type of pie is all I want in the world right now and I need to make it happen.

  • Oh please let me know how those cookies turn out! Good call on the truffles...I DO actually have white melting chocolate...just need cream cheese! So, just combine and roll until its a gooey consistency then dip, @JoeLies?
