s/o meal plan mondays - vegans/vegetarians

DH and I have gone semi-vegan recently (we still eat eggs and fish, but not other dairy - so not things laden with cheese...). Breakfast and lunch are easy but I'm struggling with dinner planning. Ideas welcome!

  • I'm a former vegetarian and still like to eat meatless as much as possible.  I love the Moosewood Restaurant cookbook that @ms.mittens linked above and I also have a "Best of Vegetarian Times" cookbook that is good.  Not everything is vegan but almost everything has vegan substitutions listed.  Cooking Light also has a good selection of meatless dishes.  They have tons of cookbooks so there is probably at least one that's vegetarian.

  • Today I sent LO to school with "Mac n cheese" which was noodles with puréed cauliflower and squash but I hear adding pumpkin works great. I put the leftovers in muffin tins and bake and freeze them for lunches.

    We do almond (PB is not allowed at school) butter and jam, hummus and veggies in a tortilla, "tacos" rice and beans with taco seasoning and add veggies on top (I usually just mix them in with the rice because LO is really messy).

    I am making a batch of spinach and chickpea patties this weekend to freeze for lunches and zucchini banana muffins freeze well for school breakfasts.

    We do pizza with no cheese with veggies a lot. Pasta with olive oil, garlic, spinach, broccoli and pine nuts is good too.

  • Oops I read that totally wrong and thought you were asking for lunch ideas. I guess the pizza, pastas and tacos work for dinner too. I also make a vegan risotto with veggies. I eat way more of the fake meat than I should but it's a quick easy meal.

  • We are mostly veg in our house (we do eat fish and eggs and dairy). Some fall favorite meals we recently brought back to the table are Rachael Ray's Veg Head Chili and Mediterranean Roasted Salmon from Taste of Home (definitely served with the Lemon Feta Angel Hair. We also really enjoy black bean and corn enchiladas this time of year, or tostada with refried beans. And we do breakfast for dinner by making breakfast burritos and beefing them up with black beans, salsa, avocado, etc. Homemade mac and cheese (Fannie Farmers 1946 recipe subbing skim milk for the cream) is so good. We default a lot to Mexican or Italian since many of those dishes can be made veg.

  • Awesome ideas everyone! @idigdirt, can you share your vegan risotto recipe? I am a big risotto lover and have trouble imagining it without the parm!!
