Barbecue Meat Loaf 1 onion, minced 1.5 T. butter 1.5lbs ground beef 0.5 cup fresh bread crumbs 1 egg 0.5 cup tomato sauce 1.5 t salt 1/4 t pepper
Saute onion in butter until soft. Combine with other ingredients, mix well. Form into loaf and place in 10"x14" baking pan. (I use a meatloaf pan). Pour 1/2 cup barbecue sauce over loaf and bake 1 hour at 350 degrees, basting occasionally with remaining sauce.
Barbecue Sauce 1.5 cups tomato sauce 1/2 cup water 2 T vinegar 3 T brown sugar 2 T prepared mustard 2 t Worcestershire sauce
Combine all ingredients in saucepan and heat until well blended, stirring. Use as detailed above.
ETA; I also have a Cheesy Meat Loaf recipe, but if you don't have a meat loaf pan it comes out a little greasy.

Pioneer Woman has an amazing recipe for meatloaf. I never have much grease in the dish, probably a tablespoon max, when I use lean beef. Plus it has bacon on the top. Who can say no to bacon?
