go ahead you can laugh at me

still on the fence about the bday sweets.. and I came across THIS recipe and the ingredients made me shudder... and then go ???? cuz the blogger claims these are light fluffy and yummy

Vanilla Cupcakes

  • 2 cups garbanzo–fava bean flour  
  • 1 cup potato starch  
  • ½ cup arrowroot  
  • 1 tablespoon plus 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda  
  • 1 teaspoon xanthan gum  
  • 2 teaspoons salt
  • 2/3 cup coconut oil (in liquid form)
  • 1 1/3 cups agave nectar
  • ¾ cup homemade applesauce or store‑bought unsweetened applesauce  
  • 3 tablespoons pure vanilla extract
  • grated zest of 1 lemon (I used 1 tsp. lemon juice)
  • 1 cup hot water

  • Yeah, those don't sound good at all...

    My favorite cupcakes are Pumpkin Spice. I think it might be a weight watchers recipe, but you take a box of spice cake mix and a can of pure pumpkin purée (no eggs, oil, etc) - mix together and bake as directed on the box.

    Easy peasy and healthy-ish

  • That recipe is a little much for me. I have heard of the ingredients but never seen a lot of them. I would probably have to drive and hour and a half to find most of them.

  • I think it would turn out pretty good. I use agave nectar as a sugar substitute and I like it....I also like to cook with coconut oil (and use as a body moisturizer too!....so many benefits!).
