Being a stay at home mom I've been worried about meals for my two year old. So here is a list of what I'm making...
Breakfast Flautas - 1lb sausage - 12 eggs - 1/4 c milk - cheese - 10 tortillas Heat oven to *375. Brown sausage; drain. Cook eggs with milk and mix together with sausage. Spoon a little into the middle of each tortilla. Sprinkle with cheese; roll up. Bake 15 min, flip and cook another 10 min. Wrap 2 at a time in a paper towel and then tin foil. I like to thaw them and bake for a few min but you can also microwave frozen for two min.
Mini spaghetti cups - 1lb pasta chills; cooked - 1 lb ground beef; cooked - spaghetti sauce - shredded mozzarella and parmasan cheese Heat oven to *350. Line muffin in with foil and paper liner. Mix all ingredients together and scoop into muffin tins. Bake 15 min. Can be frozen for two weeks. Remove foil and thaw/reheat.
Individual Mac & cheese - 1 box favorite Mac & cheese; prepared Heat oven to *350 and line muffin tins with foil and paper liners. Scoop Mac & cheese into muffin tins. Bake 15 min and can be frozen for up to one month. Thaw/reheat
Mini gluten free pizza cups - gluten free bisquick - tomato sauce - cheese - mini pepperonis Heat oven to *350. Make bisquick according to directions. Place in muffin tin, top with sauce, cheese and pepperonis. Bake 15 min. Cool and freeze. Microwave until warm. I double this and it makes 20.
Mini corn dog muffins - 3 c flour - 1/2 c sugar - 1 Tbs salt - 2 c milk - 1/2 c melted butter - 1 1/2 tsp vanilla extract - 8 hot dogs - 2 c corn meal - 2 Tbs baking powder - 1/2 tsp cinnamon - 4 eggs - 1 1/2 c shredded cheddar Heat oven to *400. Cut hot dogs into toddler size pieces. In a large bowl mix dry ingredience together and slowly add wet ingredience in order listed. Fold in hot dogs. Line muffin tins with paper liners. Scoop mix into tins; bake 15 min. Can only be frozen for two weeks. Thaw/reheat.
