I am starting to lose it because I am at 5 weeks 2 days ( I know my ovulation date) and the test is still showing 2-3 weeks pregnant. It should be showing 3+ weeks by now.
I am such a facts and figures kind of person and this is really worrying me.
Anyone else experience this?

I agree with your doctor. I can't imagine how those tests would be all that accurate.
I wouldn't worry. When it says 2-3 weeks, I think it means that you are 2-3 weeks after conception. So, even if we assumed you O'd at day 14 of your cycle (and not everyone does) then you would still only be 3 weeks 2 days after conception so you would be 2-3 weeks pregnant. Further, it is only a rough estimate so could be off by a couple of days easily.
Plus, are you certain of your O date? You could have O'd a couple of days later and/or had a late implanter. Truly, I would not worry.

Like someone posted before, the weeks number is how many weeks since you ovulated. So, 5 weeks since LMP would be equivalent to 2-3 weeks.
I used the test because my first beta at 5 weeks since LMP came back extremely low (75). I was so upset, I changed my due date ticker by a week. The day I got results, I used the test and it came back as 1-2 weeks, which would be 3-4 since LMP. I took the test this morning (2 days later) and it came back as 2-3 weeks, which is more in line with what I expect. I'm still waiting for lab results for the 2nd beta, so we'll see how it goes.
I don't know when I ovulated because I decided to take a break from TTC this month, and didn't chart or use OPK. However, I got BFN's until 2 days after AF was due, and even then it was faint. My thinking is that I may have ovulated extremely late.
Blood betas are most reliable, but if you can't wait, I would suggest taking another CBE Weeks Estimator to see if the number changes.
Not everyone has a 28-day cycle. While the cycle may end exactly 14 days after ovulation, ovulation is not always exactly day 14 of the cycle. Therefore, counting weeks since ovulation allows the test to be more consistent. If you have a 28-day cycle, then you should add 2 weeks. If you have a shorter or longer cycle, then you have to adjust accordingly.
IMHO, because of the variation in women's cycles, counting DPO is more accurate than LMP, and would save a lot of women a great deal of stress when their numbers aren't "normal".
