Ever think about this?

I found this blog post via Pinterest last night that you dehydrate your zucchini and then blend it to make a powder.  You can then use it in recipes through the year.  Never would have thought, but it's shelf stable and lasts years.  I sliced 4 yellow squash and am trying this right now.

    It mentions to add to soups or baked goods.  I love soup and I love thick soup.  I can see using this to thicken a soup without the calories of flour/corn starch.  I can see adding it to meatloaf or a casserole too.

    You can.  Usually it's like 200 degrees for 8 hours.
  • I have a serious question. Does it still maintain all the vitamins and nutrients when it is dehydrated?
