I'm making baked chicken breast, grilled zucchini & eggplant and swiss chard.

Raylan has never had meat yet, but he's going to start getting it at daycare next week, so I'm making him a turkey/apple meatloaf.... DH may want to try that too.

Then our main dinner is going to be lentil tacos and salad.

Swiss chard here as well! Making a crustless Swiss chard pie (DS's favorite), plus pan-fried flounder.

2 bunches Swiss chard + 1 onion, chopped

4 eggs

1 C milk (I use skim)

1/4 C flour

S&p, dried herbs (I use thyme)

1/4-1/2C Grated cheese (recipe calls or parmigiana but I usually use gruyere)

Saute Swiss chard and onion until wilted. Butter 8x8 baking dish and put Swiss chard mix in (drain any liquid). Sprinkle with s/p/herbs.

Beat eggs with milk and flour. Pour over Swiss chard mixture. Top with grated cheese. Bake in 375F for 40 mins until golden brown and puffy. Enjoy!
