We will be buying the Dormio organic mattress as well as mattress top. For us, this will be our biggest baby splurge next to the stroller. I have been reading up on SIDs and the toxic materials that are used in mattresses and it really worries me what baby will be breathing in. So far, this dormio brand fits all my requirements:

We registered for this one at BRU. It's 2 sided, CertiPUR-US certified foam (no innersprings), square corners, waterproof, and greenguard certified. Reviews are all very good and price isn't insane.
We have a dual sided Colgate Eco foam one. Can't remember which number - I think Classica III. It has lasted 5 years so far and held up incredibly well.
We didn't get anything fancy, just went for the Kolcraft Pediatric 800 from Walmart. It was around $40 and met all the emissions/safety recommendations, so we were fine with it. It's great that it's vinyl (or whatever) so that when the girls peed through their diapers or spit up in bed we could just wipe down the mattress. I don't like how it feels without a little extra soft padding, so we always use a mattress pad. They both have always slept very well through the night.
We got a Kolcraft Pediatric 1000 from my BIL when we had DS. So he was 2nd child to use it & it has been just fine. I can tell it is softening up since he was an infant, but he is toddler now & will probably be in toddler bed before year is out so I'm not concerned. I saw the 800 at Walmart the other day & it seemed just like his 1000 so we will probably get that one for new LO.
We also used a piece of the cardboard that the crib came in when it was shipped. We cut it to size & put it between the springs & the mattress in the crib. I think that helps add firmness too. It also helps protect your mattress from snags or scratches from the metal parts on the crib. It can happen easily when you start changing sheets so often
