Sunday I made a rack of pork. We ate that Sunday and yesterday but I could tell the girls were getting tired of it, so I made fried rice with what was left and that's what we ate tonight.
Tomorrow will be fried rice again because there's no way I'm going to be slaving in the kitchen in 100+ weather.
Thursday I'm thinking marinated chicken, and then pork chops for Friday.
DH is still out of town, so I've been eating leftover lasagna, mac and cheese, and other easy stuff.
I did, however, oven roast some delicious veggies today.
And I made cupcakes.
And I think I enjoyed my microwave Brussels sprouts from Trader Joe's just a LITTLE too much. They were supposed to last me three days and they barely lasted two. I really like veggies. My roasted veggies MIGHT make it through lunch and dinner tomorrow.
We're having barbeque the night DH gets home - I'm hoping the kids cooperate so I can make my delicious baked beans.
Alllll righty....let's see if I can pull something together for the rest of this week.
Tonight - DH and DD1 are having spaghetti and salads and I'm going OUT with some girl friends from my MOMs Club
Th: Freezer meal - prob baked ziti w/ meatballs. and salads Fri: Crock Pot Italian Chicken (new recipe I'm trying) over pasta Sat: TBD, depends on what we do during the day. Maybe steak and green beans and rice Sun: Dinner w/ my parents
Saturday I made roast chicken then used carcass to make soup for Sunday
Monday we had crockpot beef stew
Tuesday we had cod with rice and green beans
Tonight is taco night
Thursday probably some sort of crockpot chicken dish
