Baby just turned 1 - YAY! And I'm one of those moms who is nervous about what foods to give him because I don't want him to choke. At the same time, I know he can handle more than I give to him - which at this point is mostly just Stars. Everything else is either yogurt or other baby food that I feed with a spoon. I'm stuck - how do you get off bottles and baby food and trust that your baby can eat 'real' food on his own? What do I feed my baby?

As you said, it's really about trust. At some point every parent, no matter what age, will be faced with the same concerns. And not just about food. I'm sure most of us have children that are ready for the next step before we are. They're sometimes more capable than we give them credit for. I'd give him regular food and see how it goes. I don't know if I'd start with peas/blueberries, but the rest of @flamingemu's suggestions are really good. Mango, banana, avocado, or pasta kind of mush in the mouth easily. Spears of things like potatoes (think baked french fries) or toast are easy to hold and bite.
With the fear of choking it can be difficult, but trust that babies have been learning to eat solids for years and know what they are doing. You will soon learn the difference between a gag (normal, part of learning how to manipulate the food in his mouth) and a choke. Start with mushy things, as previously suggested, and go slowly. I agree with PPs to check out baby led weaning sites and/or ask your pedi. We started with mushy cooked veggies and mushy fruits and went on from there.

I feel like I waited to long to introduce table foods bc she's so picky, so I suggest you get off the baby food asap. It really sucks having a picky eater!
