I've been studying all day and just realized all I have eaten is 2 bagels and a corn muffin! Geez, talk about unbalanced meals! I know I need some protein and (yuck) veggies, but I'm home alone tonight and can't decide what to have. Probably take out of some kind just to officially make this the healthiest day ever! What is everyone out there eating for dinner? I need some inspiration!
I'm making Irish nachos. I'm going to cut up potatoes, bake them, then top with chili, cheese, salsa, and Greek yogurt (instead of sour cream). It's a black bean chocolate chili (think mole sauce) and is amazing. I don't need to do too much work since the black bean chili was made a month or so ago and frozen.
This sounds amazing - I wish we had any of those ingredients haha!
I figured after I ate 3/4 of the package of chips ahoy stroganoff sounded good. And for dessert.... The other 1/4 of cookies lol. I got the house to myself tonight and no one even needs to know cookies were in the house.
I'm having crazy food aversions still. I made ravioli for DH and DS and took one look at it and decided against it. Instead I opted for some sliced peaches and peach yogurt. Who needs balanced meals anyways?
Well I wound up driving 15 minutes to KFC because I got it in my head and couldn't shake it. Panera would have been awesome too though. .. mmmm broccoli cheese bread bowl! !
