I did read that out may be offensive to some because of its meaning. However we are not Jewish, and I got the jist it's the Jewish community that may think that- kind of like naming your child God? Right? (not sure that I am..)

My best friend is planning on naming her baby due in Feb. Cohen as well. I think it is cute. I'm from the midwest and have never really heard of the offensive relations that comes with it, so you just might want to research and still see if it's a good fit for you.
Consider that, no matter what region you live in, there is a decent chance your child might move to the Northeast (or similarly diverse West Coast) someday - for college, a job, a marriage, etc.
NYC is full of twentysomethings from Iowa and Wisconsin.
Even if a Midwestern "Cohen" goes to college close to home, they are likely to encounter many people of very diverse faiths and backgrounds. I grew up in Ann Arbor, and there is a huge Jewish population at U Mich.
I would just respect the heritage and not put a child at risk of being offensive to someone.
