    So my new obsession is baked potatoes with bacon and cheese.

    You take a potato and slice it into 1/4" chips. Brush with butter on both sides and bake on cookie sheet at 400 for 30 mins. Then sprinkle shredded cheddar cheese and bacon bits on top and return to oven for a couple minutes until melted. They are awesome (and super healthy obviously lol)!

  • Totally not so healthy but so yummy.

    Broccoli casserole. We usually have it for holidays but it could work any time really.

    2 boxes frozen broccoli
    1block Velveeta cheese
    Butter(not completely sure how much, only used to melt the cheese)
    1-2 sleeves of Ritz crackers

    Defrost the broccoli in the microwave.
    Melt cheese and butter in a saucepan.
    In a baking dish, layer broccoli then cheese then crumbled crackers. Repeat. I usually do 2 layers but you can do more if you are using a bigger baking dish. On the top layer, cover completely with crushed crackers.
    Bake in the oven at 350° for about 20 minutes.

    Cauliflower salad:

    1 head Cauliflower, chopped
    1 head iceberg lettuce, chopped
    1 bag shredded cheddar cheese
    1 lb bacon, cooked and crumbled

    dressing:

    1/2 cup splenda (or real sugar)
    1 cup mayonnaise (not miracle whip)
    lemon juice (probably about a teaspoon)
    milk (add to creamy consistency, probably a few tablespoons to 1/4 cup, depending on how thick you like your dressing)

    This is my new obsession this summer, and it is low carb if you use splenda!

    Spinach artichoke pasta-as a side dish or main dish, so good:

    I love doing:
     homemade oven baked sweet potato fries
    honey glazed carrots 

    NOT a side but I love it: Eggplant parm sliders:

    Desserts that I haven't made yet but will here in the next month or so:
    Pumpkin creme brulee

    Pumpkin coffee cake with brown sugar glaze

  • @cherylnicole, I will be making those eggplant paremsean sliders this week...they look so good!

     

    The side dish that everyone goes wow for is Ina Garten's roasted brussels sprouts, but at the end I drizzle a little bit more olive oil and balsamic vinegar and pop back in the oven for about 5 mins...they are so good....I've even converted some naysayers.

    Fresh brussels sprouts work best, but I've done it several times with frozen ones as well (I just defrost them first).
