...to make cheesy hashbrowns at 11:00pm? I was going to make them tomorrow for dinner. It takes close to an hour in the oven, and they reheat great. And, well, I really want them.

DH and I cook late all the time, when I was in college I used to make casseroles at 2am. That's what I call all my casseroles now (2am casseroles) because I did that so often lol

Sounds SO good! My BFF is notorious for late night eating. She's often having her dinner on the east coast well after we've finished our in CA, and it's always some elaborate meal. We call the late night meals "midnight steaks."
