Chicken ideas??

I defrosted chicken breasts for dinner and every time I look at them I feel so uninspired.  Anyone have a favorite dish they can post a link to?

  • I'm normally a lurker, but this is one of my favorite chicken recipes. It serves 8, so I usually cut it in half.

    INGREDIENTS:

    1/2 cup butter

    4 cloves garlic, minced

    3/4 cup dry bread crumbs

    1/2 cup freshly grated Parmesan cheese

    1 1/2 cups shredded Cheddar cheese

    1/4 teaspoon dried parsley

    1/4 teaspoon dried oregano

    1/4 teaspoon ground black pepper

    1/8 teaspoon salt

    8 skinless, boneless chicken breast halves - pounded thin

    DIRECTIONS:

    1. Preheat oven to 350 degrees F (175 degrees C).

    2. Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.

    3. In a shallow bowl, mix the bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.

    4. Dip each chicken breast in the garlic butter to coat, then press into the bread crumb mixture. Arrange the coated chicken breasts in a 9x13 inch baking dish. Drizzle with any remaining butter and top with any remaining bread crumb mixture.

    5. Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

    Shred with a fork.

    It's SO good. I make burritos with it or put it in salad. There is practically no work involved and the results are delicious!

  • I have 2 recipes that I came up with. 1.) In a bowl put lemon juice, garlic salt, and pepper. Coat the chicken breast with that then in another bowl mix oregano, parsley, thyme and rosemary. Rub that all over the chicken (like you would with bread crumbs) then put in oven at 350 until cooked thoroughly or brown. I don't really measure I just throw stuff together. 2.) Chop up some garlic and in a skillet put about 1/4 cup of oil and put garlic in the pan at high heat with lemon juice, a tad bit of salt and pepper and let sautee for 5 min. Put the mixture into a baking pan (doesnt have to be big) place chicken in baking pan and brush juice mixture onto the breast. Cut up some lemon wedges and place around the chicken then put in oven at 350 until brown. My husband goes crazy for these two when I make them. Good luck! :)

  • I am making caprese chicken tonight.  Pound out chicken breasts until thin and then layer fresh basil, sliced mozarella cheese, and sliced tomatoes on top, roll it up and bake or grill until cooked. 
    Hallelujah, it's a miracle, I have children AND a signature!
