Banana chips - school me

Has anyone made these at home? I thought it'd be nice to try it, as something to send in DS' lunch.

My slices were small, less than 1/4 of an inch. My wall oven can be a bit off (25+ degrees), so perhaps that made a difference. Also, one recipe said to dip the bananas in lemon juice, while one said to brush with juice. I brushed with store-bought lemon juice. Oven was at 200 degrees. Checked at one hour. Still goopy. I took them out after 1.75 hours and put them on the wire rack to cool. That was almost 5 hours ago. They're still goopy and gross, not crispy.
Should I have flipped them halfway? I did not, as the recipe didn't mention that, but wondered if that would help.
Also, they were on parchment paper in the oven.

Thoughts? Tips? I hope to have better luck with apple slices Friday.

Re: Banana chips - school me

  • My mom made these when I was a kid, but she used a food dehydrator. From what you described it sounds like there was too much liquid in the bananas, maybe they were too ripe or something?

  • I second the food dehydrator.  I love dried pineapple!!
I tried a pinterest recipe for strawberries like that & they were also gross.
