What do you make with left-over ricotta? I made a lasagna Friday night and I have some left- any ideas that don't involve pasta?

Could you do like a stuffed chicken breast? Either inside or under the skin maybe? That's just the first thing that comes to mind....

You can mix it with your favorite stuffing for calzones - I do ground beef, onion, garlic, and wilted baby spinach.

Eat it on toasted bread with salt, pepper and a little olive oil. I love ricotta. Also, cheesecake!

I mix it with a bit of herbs (dry ranch, dill or something similar) and use it as veggie dip.
