Leftover chicken

What do you like to do with leftover chicken? I have leftover breasts that were marinated in a lemon garlic marinade that I want to do something with for dinner. There are also red potatoes left but those don't necessarily have to be a part of the leftover meal. We are having a Mexican dish this week too so I don't want to do anything mexicanish. Suggestions?

    Not sure about the lemon, but my go-to's for leftovers are chicken pot pie, chicken salad sandwiches, chicken tetrazini.

    You could make wraps or use it to top a yummy salad.

    Chicken sandwiches, broiled on top of salad, shredded and added to pasta sauce

    I like to add them to salads or wraps.  My DH refuses left overs, so if there are left overs, they typically go into quick lunches for DS and I.

    Cut them into chunks and toss with a small-cut pasta, pesto and your favorite veggies.

    Top them with bacon, lettuce, tomato and either mayo or pesto on your favorite bread for a club sandwich.

    Mix it into a fried rice.

    Yum! I love leftovers :)
