Sunday - We're going to a friends' pool party, and they will be grilling out. We are, however, bringing a Chocolate Hershey Creme Pie as a dessert. Yum.
Monday - Chicken and Broccoli Casserole
Tuesday - DH & I are going over to a friends' for dinner, and the kids will be with my parents.
Wednesday - Chicken BBQ "Pitzas" (Pita Pizza)
Thursday - Nachos with homemade salsa and home queso blanco cheese dip
Ugh, I'm so bad. I need to go grocery shopping. The kids get back from vacation with XH tomorrow and I haven't planned meals at all. I have chicken in the freezer, but thats about it.
Tonight- J and I are having baked pork chops, peas and pearl onions, and rice
I envy you all. I fly by the seat of my pants most nights!
I plan out my meals, and then go shopping for 3 nights at a time, that way if something comes up (i.e. lots of left overs, eating out, invited to family/friends last minute) then I can just push the meals back a night and not have leftover stuff. Too often I would go to the grocery and buy tons of stuff, and then end up having to throw out the majority of the produce and sometimes even meat. Also, when I plan out meals we tend to eat healthier, eat out less, save money, and eat as a family.
Sunday - DH is making baby back ribs, corn on the cob and baked potato medley.
Monday - Penne in homemade Vodka Sauce (I have been known to make men cry with my sauces)
Tuesday - no idea,
Wednesday - Baked Coconut Chicken with steamed broccoli
Thursday - Tacos
Friday - Homemade Fire Roasted Tomato Soup
I NEED to know how to make a man cry with a homemade Vodka sauce. What is your secret??!

Tuesday: Tilapia, grilled asparagus and brown rice
Wednesday: Sante Fe stuffed peppers
Thursday: Lemon pepper Shrimp over pasta
Friday: tortilla encrusted pork tenderloin
Saturday: go out
Sunday: homemade Lasagna

I'm not sure when they'll get eaten... but I stole Illumine's advice and bought a big thing of chicken breasts today and put a couple of breasts in different freezer bags with different marinades. Totally psyched to see how this makes dinner flow.
I have BBQ chicken, sweet n sour chicken, and something I made up that I labeled sweet n tangy chicken (spicy mustard, honey, and allspice... we'll see how that one turns out)
I don't have nights planned yet because my cheesy broccoli didn't go over so well tonight and now I am trying to find some kick azz vegetable ideas for kids... I do want them to enjoy their vegetables.
But I think tomorrow we'll have the BBQ chicken with mac n cheese and mashed potatoes.
I am terrible at planning ahead, though I keep telling DH we should sit down and do that, it would sure make life easier since we both work full time outside the home.

I did though tell my 11 y/o DS that once a month he can start planning and making a dinner. I remember doing that at his age and took such pride in it! If he does pretty good, I'll move him up to twice a month

It is THAT good. My DH is a "home cook" that works very hard at cooking (some would say he becomes a weekend martyr, but that is for another post).
He has never been able to master Italian sauces. I taught him a couple of tricks, especially for his red sauces because I thought they were not good.
I have not and will not give him my Vodka sauce recipe. He "cried" at the fact that he will be denied the an amazing recipe for his repetoir.

I cannot wait until I get some space in the freezers (yep plural). DH bought a buttload of shrimp right off the boat. He has 20 quart size jars of frozen shrimps (with all heads and appendages still attached) taking over my space.
I totally am ok with the circle of life. I am totally ok getting fresh food. I am NOT ok plucking 20+ heads, shells, sets of legs AND deveining (because eew) to get to my ingredient.
So, right now, I am down to just one small shelf for my chicken/casseroles.
