Vegetarian meals...

I started a diet purification cleanse today. I can only have veggies, fruits, quinoa, brown rice, and lentils. Any ideas for me?

  • You could make a loaf with very well cooked lentils (like mushy), quinoa, caramelized onions, and seasonings. I assume you can have seasonings? What about soy sauce? Veggies are always good roasted with lemon juice and olive oil (can you have that?). You could make a crock pot casserole with lentils, rice, canned crushed tomatoes, sweet potatoes, corn, and seasoning (Mexican might work well...I'm eating a sweet potato enchilada casserole right now which is delish :)

    Ingredients

    2 tablespoons vegetable oil


    1. Heat the vegetable oil in a large saucepan over medium-high heat. Stir in the quinoa, onion, garlic, and green pepper. Cook and stir 5 to 10 minutes until the onion is tender, and the quinoa has lightly toasted. Stir in the tomato sauce and water, then season with the chili powder, garlic powder, and cumin. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the liquid is absorbed, about 30 minutes. Stir the quinoa occasionally as it cooks.

    It's a little like brown rice meets couscous...not a ton of flavor and very versatile.
    Interesting. Does it take on the flavor of what it's cooked with?
