Monday meal planning

What's for dinner this week?

  • M- meatloaf (freezer meal)
    T- tacos
    W- "goulash" it's what I grew up calling it but have learned that its not what it is..
    T- mushroom alfredo
    F- spaghetti
    S- BBQ at in laws
    S - steak and potatoes

    My mom's Meatloaf (made into mini loaf pans and frozen)

    1-1 1/2 lbs lean ground beef
    1 egg
    1/2 diced onion
    1/2 -1 cup Italian bread crumbs
    Garlic salt
    Pepper
    Italian seasoning
    2 8oz cans tomato sauce

    Mix everything, except the tomato sauce, well with your hands. Add 1/2 can sauce to meat and mix well. Turn into a loaf pan and push a "well" around the sides and on the top (for drainage and even cooking).

    Bake at 350 for 1-1 1/2 hours, suctioning out any grease about half way through. Pour other can and half over meatloaf and sprinkle with a bit more garlic salt and pepper.

    Use low end of ingredients and time if using just 1 lb of hamburger.

    M-tator tot hotdish
    T-hamburgers on the grill and sweet corn
    W-we're going out to eat whoop!
    Th-spaghetti
    F-chicken Alfredo

    Tator tot hotdish for a 9x13 serving:

    1-1 1/2lbs lean ground beef
    1-2 cans of cream of mushroom soup (I use Campbell's healthy request)
    1/2 of a sweet onion chopped or sub onion powder to taste
    1 can of corn or 1 1/2 cups frozen corn
    Tater tots
    Salt
    Pepper
    Lawry's seasoning

    -Brown ground beef with chopped onion or onion powder, lawry's, salt & pepper; drain. Add to a lightly greased 9x13 pan
    -add corn & cream soup to beef; stir until well combined.
    -arrange frozen tater tots on top of the beef, soup, and corn mixture, covering the entire 9x13 area. Season with salt and pepper if desired.
    -bake uncovered at 350 for 30-40 mins

    Edited for spelling.

  • Not sure what day we're eating everything, but here's what we've got on the menu for the week:

    Chicken Bahn Mi
    Homemade mac & cheese
    french toast
    chicken salad sandwiches

    we're going out Wed night and one day on the weekend most likely

  • SUNDAY: Enchiladas with spanish rice and black beans

    TODAY: Homemade Mac 'n cheese with steamed sausage and A side salad

    TUESDAY: Cilantro Lime Chicken with coconut rice and steamed broccoli

    WEDNESDAY: Beef Pot Roast with potatoes, carrots, celery and cornbread

    THURSDAY: Tacos (using leftover roast) with broccoli slaw topping and chips and salsa

    FRIDAY: Beer Battered Fish Filets with steak fries and side salad
  • M - mince biriyani with chicken makhani

    T - seafood pasta

    W - shepherds pie with vegetables

    T - club sandwiches with chips

    F - macaroni cheese with griddled chicken and green salad.

    S - perhaps takeout

    S - roast with all the trimmings.

    Cod with couscous (not sure yet how I'll prepare the cod... Maybe baked?)

    Spicy bean and rice burritos

    Homemade spinach artichoke pizza

    When I do fish and couscous I bake with cherry tomatoes garlic and lemon. So yummy!
  • My husband won't be around for the week, so I am contemplating ordering a few pizzas and living off of those. But thanks for all of the ideas for the future!
  • This week is moving week, so we'll be hitting up the health food store's deli daily. :-P

    Moving? PCSing somewhere new? I thought you moved while pregnant... anyways, good luck! I hope your move goes smoothly!
  • M-Hot dogs and spicy beef patties
    Tu- Shrimp and Spaghetti
    W- Pork Chops, corn, and garlic bread
    Th- Bacon cheeseburgers and fries
    F- Baked Chicken and green beans
    Sat-Going to friend's house (bringing taco dip recipe below)
    Sun- Steak tips over rice

    Taco Dip
    1 lb. ground beef
    1 15 oz jar Tostitos Salsa con queso
    1 envelope taco seasoning
    1 small can sliced black olives
    4 oz Mexican blend shredded cheese (half bag)

    Cook ground beef to well and season with half the seasoning in the envelope. Drain.

    In mixing bowl combine the salsa con queso, olives, cheese, remaining taco seasoning, and beef and mix well. Transfer to microwaveable serving dish as this dip is best served warm. Serve with tortilla chips.

    No PCS thank goodness. Although, I'd go back to Hawaii in a heartbeat! We're just moving on base. The housing waitlist was 18 - 24 months, so we were surprised to get the call after just 7 months. Even though we love our current neighborhood, we're having lots of problems here, so we're taking the base house. No more commute for H! Yay!

    Rest of the week is up for grabs but we will have pasta one nigh and chicken breast one night. That's all I know so far. I'm terrible at planning meals. DH will probably cook next three days since ill be working and getting home after him
