Working moms- Dinner?

How do you handle dinner prep in your house? Also what time do you get home?

I get home with LO around 5:30. I do majority of the cooking. But lately I've been rushing so much to get dinner made because LO is hungry by the time we get home. I feel like I'm in a rut of making the same, quick things.

H has started cooking more lately. He gets home a bit before me. He can make some things and he grills.

Making dinner has just been a PITA lately. Any tips?

Re: Working moms- Dinner?

  • This was me until I got a crock pot. We were going out on almost all the nights I worked.

In the crock pot, we do philly cheese steak, chicken teriyaki, orange chicken, pork and veggies, a mexican salad with chili verde, chicken, pinto/black beans over a big salad with a tortilla. We do a ton of stuff in there.

It's great because even if you dont use it to make your whole meal, you can at least throw your meat in there and have that ready for when you come home.

  • I'm not a pro but the main thing that helps us is meal planning. Here's my list for this week & next:
Today baked salmon w/ green beans & farro. Tues grilled turkey burgers (frozen patties) w/ avocado & baked sweet potato fries - we'll have salad but DD will have leftover green beans for her veggie. Wed grilled veggie & chicken pasta, thurs tacos, Fri soup & sandwiches or we might order a pizza, Sat - not sure yet, Sun oven roast whole chicken, mon spaghetti (make sauce on Sun), tues BBQ pork in the crockpot, wed enchiladas using leftover chicken from Sun, thurs cod baked w/ tomatoes & peppers, Fri - leftovers, soup or pizza depending.

  • Red, I have a crock pot and enjoyed using it but for some reason I stopped. :/ I'll have to start using it again. It really is a time saver.

EMO, your menu looks great! I'm not that great at meal planning but I should probably work on that. Thanks for the ideas.
