NTTCALR: Weekly menus?

Hi ladies,  I need inspiration for my weekly menu.  I try to do this every week but sometimes fail because I can't always think of enough variety of meals + level of involvement.  Generally, the easier, the better in my book, but I will invest more than 20 minutes in dinner if I must.  Anyways, do any of you put together a menu once a week?  How do you mix it up?  What's on the menu this week?  I know I can go to pinterest, but I always get sucked right into the foodgasm section (read: desserts).  TIA for any suggestions.

  • This isn't very exciting but DH and I always chop up a big salad fOr the week. It provides lunches and dinners as we're often on different schedules. We use various greens, all colors of peppers, broccoli, jalapenos, some type of nut. We used to add cheese, either blue cheese or goat. Mmmmm...

  • I am trying to get into planning weekly menus, hoping to sit down and do one tomorrow. I found this recipe in Cooking Light magazine today. I thought it looked tasty and easy.     Yes, love it.  Good idea, because you can always mix it up, too.  I like to put falafel's on my salads.  Weird, but so good!

    -Chili
    -Baked chicken fingers w/ asparagus
    -Mexican bowl (rice/meat//chili powder/onions/salsa/100 cal packs of guac
    -Stir Fry

  • My mom brought me up on very "50's" style of meal planning in that every meal shoukd have a protein, starch, veggie and either fruit, salad or bread...so sadly I stick to that a lot. Example, tonight we are having a ham steak, pasta, pineapple, and steammed broccoli. Tomorrow probably italian sauage stuffed pasta shells, zucchini and side salad. At walmart they lately have had these delish stuffed soft shell crabs, heat in ovenand baked potato and veggie. Those are our common types of dinners.

  • Do you have a crockpot? Chicken tacos in the crockpot are really easy. For the tacos I just throw boneless chicken breasts in the crockpot with a can or two of tomatoes with jalapeños, and an envelope of taco seasoning. The chicken shreds easily after cooking all day in the crockpot. I add chicken broth, crushed taco shells, corn and sometimes beans to the leftover chicken/tomato mic, then we have tortilla soup for dinner the next night.
    I'm all about doing the piggy-back thing.  One dish one night making for a good lead-in for dinner the next with a few extra ingredients.  And yes, I have a crock pot but sadly rarely use it.  Might have to dig that thing out.

    Yum!   We love to have a week or two a month where we have "breakfast for dinner".  Waffles sound amazing right now...might add that to my menu list :)  Thanks @mara005!

    @Kinipela7, I can always rely on you for great ideas :).  Your Mexican bowl sounds a little like something I'm making this week.  How do you make the baked chicken fingers?  Do you use a frozen option or make them yourself?

    My mom had a very similar approach, so those dinners all sound great to me!  How long do you usually spend on dinner?  I really try to keep it to 20 minutes or less, especially in the summer time.

    @Kinipela7, I can always rely on you for great ideas :).  Your Mexican bowl sounds a little like something I'm making this week.  How do you make the baked chicken fingers?  Do you use a frozen option or make them yoursel

    I buy the chicken strips (not frozen) - Preheat oven 450 degrees.  Wash chicken, roll them in a whisked egg (or milk) and then roll them in bread crumbs.  Bake for 20 minutes.  Dip in favorite sauce.  We use honey mustard and buffalo a lot!

    Sat: dinner @ a friends house (we're bringing chocolate covered strawberries...yummm)
    Sun: grilled salmon with lemon and dill, roasted veggies, and brown rice (extra rice made for....)
    Mon: tofu and veggie stir fried rice (using up the extra made from Sunday)
    Tue: veggie kabobs, we're going to marinate the veggies and grill them...yum.  with salad
    Wed: Mexican pie...basically corn tortillas layered with sauteed veggies, black beans and topped with pepperjack cheese baked at 450 until bubbling.  Served with watermelon slices
    Thurs: Veggie pizza and salad
    Fri: popcorn, cheese, apples and wine  pomegranate juice :)

    Ancho pork and hominy stew

    Greek couscous with shrimp (we're substituting quinoa to make it GF) with sauteed zucchini

    Tacos with ground turkey

    Citrus marinated chicken thighs  with some kind of green veg and possible sweet potato

    Cheesy polenta with mushroom saute and a green salad

    It depends on the meal and day.  I work two nights a week (when DH eats like a college kid for dinner) and DH cooks on the weekend so I only have to cook M,W,F usually so I don't mind more time.  The Ham steak meal is under 20 min., the stuffed shells only takes 25 to prepare but then takes 50 min to bake.  The Stuffed crab meal takes 20 min to bake and baked potato depends on if you do crockpot, microwave, or oven.  Most meals I cook take 30 min or less.

  • I meal plan 2 weeks in advance. I also try for simple meals and more homemade stuff. It tastes better. I have a tab on my blog of some of them meals I make.

    I haven't done this week's meal planning but I try to go with a bunch of stuff that can be reused: tacos one night, taco salad another, chili dog casserole, sloppy joes, spaghetti, homemade pizza... I bought roughly 4 pounds of meat for that and cooked it up on one day. The tacos and Chili dog casserole take tortillas. Spaghetti sauce is also used in pizza. You get the idea. I made a huge batch of sauce one day and froze it.
    I have short term memory loss. Do not take it personally if I do not remember you right away.
    No longer trying to conceive at all.

Throughout the week I pin recipes onto Pinterest under a board I call entrees so its just dinner meals. Then on my meal plan days, I use a word doc to fill out my menu and grocery list while I look at Pinterest for ideas. I print that out and take it with me to the store (it's all categorized by aisles for easier shopping) and then leave it on my fridge so I can see throughout the week what the plan is and what I can prep. I have everything on my blog, including the word doc template I use and the links to the recipes, if you guys are interested. Here's what I planned for this week: Thursday- breaded chicken with homemade Mac n cheese and broccoli/ Friday- d&c so I didn't cook/ Saturday- tomato and basil paninis with soup/ Sunday- Mongolian beef with rice and edamame/ Monday- taco bowls/ Tuesday- sweet and sour pork loin with mashed potatoes and peas/ Wednesday- coconut breaded chicken with roasted potatoes and corn on the cob/ Thursday- BBQ chicken pizza with whole wheat dough.

  • Since Mondays are my day off, I like to make some slow cooker meal as I clean the house and do laundry. Tomorrow will be Carne Asada. Dinners for Tues and Thurs tend to be my responsibility and usually I'll make one chicken dish, one pasta. This week, I'll make chicken parm Tues and bow-tie pasta with oil tuna on Thurs.

    Great! My internet is totally unreliable because we have a mobile hotspot and live in the middle of the boonies, so I'd be happy to run the check-in but I'm not sure if it'll be consistent...What day do you think?

    We do the same too. Except when its pasta, unless there are veggies in the pasta. Every dinner has to have some sort of meat though, according to my husband. He'd eat steak and potatoes every day if I let him.

  • I meal plan every week! I love it and it helps me so much in terms of grocery shopping, keeping in my budget since I don't have to go to the store 50 million times, and staying healthy. Throughout the week I pin recipes onto Pinterest under a board I call entrees so its just dinner meals. Then on my meal plan days, I use a word doc to fill out my menu and grocery list while I look at Pinterest for ideas. I print that out and take it with me to the store (it's all categorized by aisles for easier shopping) and then leave it on my fridge so I can see throughout the week what the plan is and what I can prep. I have everything on my blog, including the word doc template I use and the links to the recipes, if you guys are interested. Here's what I planned for this week: Thursday- breaded chicken with homemade Mac n cheese and broccoli/ Friday- d&c so I didn't cook/ Saturday- tomato and basil paninis with soup/ Sunday- Mongolian beef with rice and edamame/ Monday- taco bowls/ Tuesday- sweet and sour pork loin with mashed potatoes and peas/ Wednesday- coconut breaded chicken with roasted potatoes and corn on the cob/ Thursday- BBQ chicken pizza with whole wheat dough.
    I want to come to your house for dinner!  Sounds like a delicious menu!  This thread really makes me realize I need to stop cooking the same shit every 2 weeks!
    Haha, thanks! I try to vary it. I like to cook so trying new things is fun. I really need to stop cooking with brown sugar though. Almost everything I pin uses it and I don't think its helping in the weight loss department. @Carlsonbaby2014 and I were thinking about doing a weekly meal plan check-in if you're interested!

    Great! My internet is totally unreliable because we have a mobile hotspot and live in the middle of the boonies, so I'd be happy to run the check-in but I'm not sure if it'll be consistent...What day do you think? 
    Yeah!!  We could do an every-other week set up?  I do one, you do the next? I've never led a check-in before.  It's all new for me so let me know if you have a different idea :).  Thanks @barefootandboots!
