My son plays on his wood table and then we just clean it up from there. We have hard wood floors in the kitchen so they are easy to clean if it gets on the floor.
Mine uses vinyl kid placemats on the rug in our living room (that is on top of hardwood floors). This way any crumbs stay on the rug and not bounce around the hardwoods and I can easily vacuum them up when they harden.

He plays at the table and I sweep up the floor when he is done. I also play with him so I kind of clean up the little pieces on the table as we go so that they don't fall on the floor
Make sure you sweep the floor before he gets down and tracks it everywhere. Let him play on a cookie sheet to try to limit the crumbs. Be thankful that it is playdoh and not moon dough.
