We have a "leather-esque" material couch from Big Lots, we got the couch and 2 recliners for $800. We figured we'd get it and not feel bad if we have to replace in 3-4yrs, we are on yr 2 and it still looks brand new, even with the dog, cat and now D crashing on it all the time
@origamipoppy we have an ikea sofa with a double chaise. I love it for the comfort, but we paid $2k for it with an upgraded fabric and it is filthy (we picked a light color pre-kid). I would buy another cover set but it would be $800 and the legs look so shitty. It would only half way solve our problem. I'll try to pip
Are you and your hubby handy? Maybe you could make new legs then stain or paint them however you want.
Regarding West Elm, some of my friends have furniture from there and love it. I've also heard great things about Restoration Hardware. How far are you from Columbus, OH? We have a West Elm store here!
I second microfiber. DH had our couch before we even met, it is probably 10+ years old. It doesn't look brand new, but it doesn't look 10 yrs old either, we have 3 kids and 2 dogs (and at one point had 2 cats) and it has held up great. It is a dark color

As others mentioned, I have microfiber couches and when we purchased them, we paid a little extra for some kind of treatment which was supposed to add extra protection against stains. I can definitely testify to how good they are since DD threw up on both of them two weeks ago and I was able to use some Febreze and water and you would never know it happened!

We have England brand which is made by lazy boy & were able to pick out the fabrics for them at a local furniture store. We chose a patterned fabric with the thought that it will hide stains. We also keep a throw blanket on it at all times lol.
We've had them for a few years now & so far so good.
I'll give you some more practical advice. I found a Mitchell Gold + Bob Williams couch on CL a few years ago. They design, or used to, the couches for Pottery Barn but also have their own line. Mine is a chenille slip cover in a silvery light griege color. It is seriously amazing. Comfortable, washable, durable and the material shows nothing (no even evidence of my incredible puking baby). It is a really quality piece and looks it. I believe you could find something in your budget from them. I'll see if I can find a pic of mine.
I don't have a couch from West Elm, but I do have my eye on one for the next time we buy a couch. We have a 'spensive down filled couch with a tweed like material that is now in the gameroom with a cover because my cat liked to use the arm for scratching. Mother fucker. We have an off white modern leather sofa in the family room right now. I like it but it isn't very big. We got it because the cat doesn't scratch leather and I find it easy to keep clean (even though it is whitish).
