Eggplant parm

Hi all! When making eggplant parm....do you salt it to "sweat it out" before baking/frying? Does this make it less bitter? TIA!

  • Not for eggplant parm. If I'm making veggie lasagna I microwave it to dehydrate, makes for a much less watery dish. I prefer doing it that way to salting it. I've never found eggplant bitter, so I can't speak to that.

  • @Mrs.Hizzo...Bless you. I thought everyone would be caught up in the hitting fiasco that I'd miss dinner ;) I ended up not salting it, we'll see. Genius microwave idea, btw. Makes sense...
  • I salt it and let it sit for 30 minutes.  I dab it with a paper towel, season, and bake. I hope it turns out well.
