Sunday - Rotisserie Chicken Ranch Pasta Dinner (I found this recipe on Pinterest & this will be my first attempt) & a side salad
    Monday - Tacos
Tuesday - Pot Roast & mashed potatoes
WednesdayFried Rice w/ Chicken & a mixed fruit side
Thursday - Sloppy Joes w/ sweet potatoe tots
    Friday - Chicken Pot Pie
Saturday - Spaghetti & garlic bread w/ a side salad

Clearly, I'm pretty simple. Cooking really isn't my forte... I'm working on it, though!

Sometime this week I will also try making Cheesecake Stuffed Strawberries - another Pinterest find.

Sunday- Beef roast with potatoes, carrots, onion, mushrooms and Yorkshire pudding. With watermelon (cause pregnant me said so)

The rest depends on my mood that day/night. But here is what we bought and plans for meals:

-Grilled ribs, potato bombs, watermelon, corn on the cob
-Fried Chicken, garlic rice (homemade), green beans
    -Steak, baked potatoes, vegetable kabobs
-Chicken kabobs, coconut rice with black beans, fruit salad
    - Date night - kids will have either pizza or spaghetti and meatballs

IDK for Saturday because our menu begins on Saturday which is shopping day.

An alternate: Turkey, stuffing, potatoes, green beans, carrots.
    or
    Meatloaf, potatoes, carrots, corn
Most of that is just put it in the pan at various times and ignore.

I have several turkeys in the freezer because I like them a little to much. I am a slight food hoarder. I have gotten a lot better about it and only have a stand up freezer full plus my small pantry. That is actually pretty good for me. It use to be the fridge freezer, small chest, and a stand up freezer.

Wednesday: Nachos with the leftovers from tacos & rice
Thursday: Dinner out after TKD awards ceremony
Friday: Chicken rollatini with spinach & garlic mashed potatoes
Saturday & Sunday I don't cook. We go out for lunches and I force everyone to fend for themselves for dinner.

  • I have been REALLY craving buffalo chicken for the last few weeks.

Anyway, this is what I make. But rather than the avocado ranch, I make a healthy-ish blue cheese with reduced fat sour cream, kraft olive oil mayo, and crumbled blue cheese. The kids don't 'do' salad, so I give them theirs in wraps.

  • Tonight - sundried tomato pesto with pasta

Tuesday - grilled tuna fish sandwiches with roasted red peppers and sweet potato fries

Wednesday - Italian Sausage, Potato, Onion and Sweet Pepper Bake

    Thursday - left overs

    Friday - pizza night.

  • I'm late and kind of play dinners by the ear even though I meal plan before shopping on Fridays.

About those strawberries I have a Pampered Chef recipe that I used & oh my goodness so simple and amazing. 3 ingredients!

DH just made fun of me for being a food hoarder. We have plenty of food for at least 2 weeks but I grocery shop every week. I don't want to run out of food in case of emergency haha.

But since I only have the pantry and the freezer (side by side fridge) full, I don't feel so bad. Thanks!

    Taco zucchini boats sound yummy!!

I am lucky if I plan one meal a week.
