NBR: Suggest your recipes with lots of leftovers!

DH and I are starting new jobs on the 19th, and I have two nights a week where I work til 5pm.  DH won't be home until after 6:30pm every day.  He normally cooks dinner while I take care of DD - but now I'm going to have to take care of her AND cook AND attempt to maintain normal bed time.  And on the nights when I work til 5, it'll almost be bed time by the time we get home...

I'm spoiled rotten and have been working 7-3:30 for the past few years... so I have some adjusting to do.

Anyways, I'm looking for suggestions (or websites) with meals that I can make and have leftovers for another 2-3 nights (ideally I would like to NOT cook on those day where I work til 5pm).  Crockpot stuff works for me too!  I just feel like we're in a food rut, and I can't think... Let's hear them, ladies!

  • I am terribly uncreative with dinners, but my go-to is salsa chicken in the crockpot. I put 4 frozen chicken breasts in the crockpot and cover them with salsa verde (or regular salsa) and then set it for however long I'll be gone. I shred it when I get home and we have tacos, burritos or taco salad with it. The leftovers are also great for taco soup.

  • we are rather lazy meal prepers here. Make rice and have as left overs with shreadded cheese, and some canned beans & maybe cannes tomatoes. That is one of our easy go-tos.

  • Make rice and throw in some frozen broccoli or green bean and when almost done add left over chicken and cheese. It's my lazy day meal
  • I haven't tried this yet but some Moms on one of my FB groups were talking about this. Take a whole rotisserie style chicken, season it however you want (they recommended smearing it in herb butter) and turn it upside down in a crockpot and let it cook all day. They say the upside down keeps it moist and it creates its own sauce.

  • I cook a whole pork loin and portion it out for lunches/dinners.  You can add it to rice, pasta, or have it as a main dish.  It cooks beautifully in a crock pot!!  I also like sloppy joes in the crock pot, and spaghetti!
