Want to be slightly envious? I no longer have to meal plan with the three of us. I realized I was making large dinners and both girls only ate a couple bites, wasting the rest. DD1 informed me she doesn't do left overs either.
dinners now are super easy-usually fresh fruit, carrot sticks and yogurt. If they want protein it's a slice of turkey or peanutbutter. The best part-no cooking! They eat warm, balanced meals at school and I'm loving this easy route.
Now to answer your question-currently I'm hungry and this is what's on my mind: tacos, bacon wrapped shrimp and chocolate chip pancakes.

Turkey meatballs with one pot pasta; spinach and cheese quionua patties and BBQ beer-can chicken; Chicken and wild rice and vegetable soup; stir-fry mixed vegetables, tofu and beef on rice; BBQ chicken sausages with spinach, tomato and avocado salad.
- grilled teriyaki steak tips (marinated the night before) and caprese quinoa salad
- grilled chicken breast, green beans and garlic bread (my go to easy meal is throw chicken on the grill!)
Tonight we are having herb roasted chicken that I marinated last night while DS was eating. And Friday is pizza and salad (which I cheat and use a boboli thin crust for).
I've been finding lots of new recipes on Pinterest.
ETA: DS eats so early that he usually gets leftovers from the night before (or some version of) and we cook/eat after he goes to bed.
Crockpot chicken parmesan, broccoli (leftovers from weekend)
Crockpot Korean beef served in tortillas with asaragus stir fry, fruit (leftovers)
We had a date night (first dinner date since DS was born!) and the kids had tortillas with lunch meat, cheese, fruit salad and then I have no idea what the sitter let them have. We don't have any junk, so probably more fruit.
Chicken sausage, green beans, fruit (first meal I will cook this week, tonight)
Taco Bell (Confession: we eat this weekly. the kids eat a fruit salad before we go or in the car, then cheese quesadillas and I eat fresco tacos. I figure, I could MAKE them cheese quesadillas, but how much worse can fast food quesadillas be?? Not that bad). This might actually change to homemade pizza this week.
We bought a tub of pulled pork from Costco. The other day I made a BBQ pulled pork pizza. I used The Pioneer Woman's rosemary foccacia recipe for the crust, and then I topped it with BBQ sauce, fresh mozzarella, pulled pork, onions, and bell peppers. Yesterday I made Giada's balsamic BBQ sauce to go over the pulled pork, and served it with the Pioneer Woman's crash hot potatoes, and baby carrots with ranch.
Sunday - whole wheat pasta with veggies, meatballs and goat cheese. Monday - Manwich with cheese on pump/rye bread and side salad Tuesday - crockpot spicy beef sandwiches on whole grain roll and Caesar salad Wednesday - grilled buffalo chicken breasts, brown rice and steamed green beans Thursday - boneless, marinated pork chops grilled, corn on the cob and tomato cucumber salad Friday - going to a minor league baseball game and friends are having their box catered so we will see! Saturday - grilled sausage with peppers and onions, whole wheat egg noodles and side salad
Monday: quickie dinner of Velveeta skillet meal with ground turkey, steamed broccoli.
Tuesday: marinated/baked chicken breasts, rice, corn on the cob.
Wednesday: burritos from the taqueria
Thursday: leftovers
