Easy meal prep

Hi there.  I am going back to work full-time in 3 weeks and am looking for good websites to help me prep quick, healthy meals.  I have two little ones and luckily our home daycare provider will be cooking breakfast and lunch for my kids, but I struggle with having the time to cook good dinners.  Suggestions please?

  • Have you tried skinnytaste.com? I love a lot of we stuff. She even has a whole section devoted to crockpot meals.

  • Family Circle magazine and website always has some good quick recipes on it. I'm not sure if the website has it but the magazine gives you an entire month planned out of quick recipes, it's very cool.

  • Cooking Light is great for fast, healthy meals. Real Simple is also a good choice. We also bought Nigella Express and Gordon Ramsey's fast food cookbook, and we use them both regularly.
  • One thing hat has been very helpful for me is I make large batches of turkey meatballs and freeze them. Makes spaghetti a super easy dinner. I also make big batches of shredded chicken, and it makes quesadillas, burritos, tacos, buffalo chicken wraps all super easy and fast.

  • I use onceamonthmom.com I cook 1x a month and have freezer meals for the entire month
    I have never heard of this but it sounds amazing! Going to check that out now!

  • I do some crockpot meals.
    Some freezer meals - where I'll freeze the whole casserole, but also where I'll just freeze parts of a meal - like taco meat or browned hamburger or cooked chicken, so that it's easy to toss together.
    I only cook like 3-4 times/week because we have 2 adults and a 1-year-old, so many times, 1 casserole = 2-3 meals.  We don't mind leftovers too much.

  • I never meal planned before DS, but now I plan out all our meals. I wash and chop up all vegetables on Sunday - that saves a lot of time. We'll do one crockpot or freezer meal one night and do take-outs or eat out on fridays, so that's only 3 weekday meals that I have to cook. Skinnytaste is good. I also like the gweneth paltrow "it's all good" cookbook - most of the recipes are easy and don't require a lot of ingredients and are very healthy.
