I'm having brunch at my house Sunday and a friend of mine has GD. What are some good things I can make for her? I was thinking maybe some type of quiche but other than that I really don't know.

I have GD myself, and granted this is just my opinion, but I would try to stay away from fruits and dairy - for a lot of folks with GD those things can make your morning sugars high (you need to test your blood sugar about 2 hrs after eating a meal). Things like egg whites, turkey breakfast sausage or patties, small waffles or pancakes with sugar free syrup or peanut butter (3-4 inch across), small muffins, oatmeal...these are good things typically. As for quiche, I'm also been gluten free for the last 2 years so I'm a bit out of touch with things like quiche LOL. Things like fruit and dairy CAN be enjoyed, just typically in super small quantities. So if you're thinking cheese for the eggs, have them on the side. Fruit on top of pancakes? Offer it on the side.
Oh, and if your friend is a coffee drinker low carb/no carb creamer (think Coffee Mate, original flavor) and a sugar substitute would probably make her cry with joy. As a coffee drinker, I know it would make me feel loved!
A quiche (with no crust) would be perfect! I have a great one that I made a TON when I was pregnant with DD2. It's got ham, mushrooms, onions and cheese, but really any veggies would work. It's packed with protein and so it's filling without sending blood sugar sky high

Think low carb/high protien options. For dinner last night we had Chicken Marsala, brown rice and mixed vegetables. Jalepeno poppers, home made salsa with wheat chips, fish (low in mercury), salads, soup and anything grilled are all good options too!
