Eh that is tough. It took us a while since ds only had 4 front teeth till 14 months. But bananas, strawberry, soft cooked potatoes, carrots, peas and stuff like that he could eat along with baby mumums. Then slowly move up to chunkier foods. Mine also had a terrible gag reflex but it did get better.

March 6th our little man was born.
6/17/13 - Ovidrel, Follistim, Prometrium ~ IUI #1 7/2 = BFP! March 17th our St. Pattys day baby arrived
10/29/17 - Started process for IVF, got pregnant & miscarried a 2nd time since summer. 2/22 started stims - Menopur, Gonal F, Cetrotide - retrieval 3/6 - , PIO, estrace 3xday - FET 4/18 = Beta 1: 616; Beta 2: 1342 = BFP
This isn't a complete list, but maybe it will help spark some inspiration for you:
Breakfast:
eggs, toast, oatmeal, yogurt, applesauce, waffles, pancakes, cinnamon rolls (the last three are special treats on weekends only).
Lunch:
sandwiches (cut up so he can pick it up), steamed or frozen veggies, melon, apple sauce, left overs (especially pasta), lunch meat, toast, crackers, cheese, cottage cheese, apples, bananas
Dinner:
pasta, meatballs, grilled/roasted chicken, hamburger (cut up into bites), fish (DS loves the white fish like tilapia, cod, grouper, etc., mashed potatoes (ar any potatoes for that matter) noodles, rice, veggies as long as they are bite sized especially corn.
I think the biggest thing is just to let him try stuff and make sure his meals are as balanced as possible with fruits and veg along with starches, and protein, and not too much sugar or fat.
At that age, LO ate everything we did other than chocking hazards and the things he ended up being allergic to. Some things were easier deconstructed, such as he would eat everything out of a fajita, including the tortilla, but not all put together as it would be hard for him to keep together and hold in order to eat whole.
We were the same - minus the allergies because he didn't have any. We just gave him the same things DH and I did. But he also tended to deconstruct them himself (like opening up the taco and pulling things out of it)
