We switched to 1% at 2 years (pedi said we could do skim in we wanted). And I don't think milk is required, so no recommended minimum. Mostly make sure LO isn't using it as a meal replacement.
We switched to 2% at 2. The whole family drinks the same milk. We offer milk at breakfast, lunch and dinner. My son probably drinks about 6-12 ounces a day. He drinks a lot of water too. No other beverages.

i switched to 2% a little before his 2nd bday (maybe like a month before) but he has never had straight milk i've always mixed it with soy or almond. he probably gets 1 to 2 sippy cups a day but he doesn't care for it as much as he used to

I don't pay attention to how much milk my kids drink. I'd guess both my 7 yo and 3 yo are drinking around 12oz/day - a small cup at each meal. We drink skim and have for a while now. When DD2 turned 2, we switched to 2% and then at some point just started buying skim instead of 2% for kids and skim for us.

She gets 22-26 ounces of milk a day. I *think* my pedi told me it the recommended amount was 16-24 ounces.
