Sorry, Rachey, hope I'm not stepping on toes!
What's everyone eating this week?
Bonus question: What's a go-to hot weather dish? We are in an excessive heat wave, and I don't even want to send DH outside to fire up the grill, it's that bad out there.
Re: Meal Planning Monday
Sunday: breakfast for dinner, which was sausage, cheddar and green onion omelettes, fruit and home fries
Monday: brown sugar pork chops, baked potatoes and corn on the cob
Tuesday: out with friends
Wednesday: steak fajitas, black beans and homemade guacamole
Thursday: DH's fancy work party
Friday: Lemon Parmesan Pasta with chicken and baby spinach
Saturday: chicken stirfry and "fried ramen"
My favorite hot weather dish is grilled basil lime chicken. Totally worth firing up the grill! The basil and lime are so fresh and refreshing and go perfectly with some nice grilled summer veggies. This was Saturday night's dinner. YUMM.
People from church are delivering meals for us this week, so I'm only planning back-ups in case it's stuff that DS won't eat.
So pretty much kid-friendly food and leftovers since DH is gone - BBQ, spaghetti, macaroni & cheese...
This sounds delicious!!
That is so nice! My MOMs club is bringing us meals 1-2 times a week, it has been super helpful.
M: we had chicken parm and spaghetti.
T: one of my friends dropped off Lasagna and Caesar salad.
W: crock pot BBQ pulled pork
Th: something from my freezer stash. Probably enchiladas.
Fr: Burgers and pasta salad
S: TBD, depends on what we do during the day
Sun: Dinner with my parents
I attempted to post a link to the recipe, but mobile just feasted on the dashes. Google "Basil Lime Chicken" and it's the first entry.
