I was thinking of doing a Bed and Breakfast or something but that isn't really H's thing so I thought maybe I could do tickets to a comedy club and a night or two at the Riverwalk but Austin is only a drive away as well so I thought I'd ask others about experiences and what they enjoyed or where to stay, etc. Thanks!

Re: 7th anniversary help - Texas
Riverwalk is fun. We stayed at Hotel Indigo that is just caddy corner from the Alamo and really close to the Riverwalk.
Austin is always fun but I did so much in Austin during my "party days" that I'm over it but it does have the Round Rock Express and that is fun. There are several breweries in Austin and San Antonio and both also have a Flying Saucer which is really good beer.
What part of Texas are you in? We are doing Fredericksburg for our Anniversary in October. It's not DH's thing either but he wants to take the (classic) Mustang out for a drive down some country roads and I want wine so we are driving down country roads from Fort Worth to Fredericksburg and going to lots of the wineries. They also have a brewery down there to tour.
We love the Marriot and the Westin resorts in both cities' Hill Country areas. The one in Bastrop was great for our babymoon.
You could also, often for the same money, rent a small house on Canyon Lake (SA) or Barton Springs (Austin) similar to get the B and B feel, without other people and all that goes with a B&B. We rented a house on Barton Springs when I was pregnant with DS and the light switch was a boy (with boy parts where the switch was) and it shocked me when I first touched it - I was sure from then on DS was a boy. Point is, there are some funky fun rentals in that area.
Here is the brewery DH sent me. https://www.yourbrewery.com/
We are thinking about staying at one of these B&B's. They are more like a private house.

In San Antonio you have a few breweries. Freetail, Pearl, Ranger Creek, and Blue Star.
In Austin you have 512, South Austin Brewery, Live Oak, Independence and a few more.
