Thai Chicken Salad

1 rotisserie chicken, cut into big chunks
2 generous cups broccoli slaw mix
1-2 mangoes, cubed
? c. fresh cilantro
? c. chopped peanuts
** Toss everything together in a big mixing bowl
Sauce:
(I just threw all of this into the magic bullet until it was smooth)
2 cloves garlic
1 habanero (de-seeded, deepening on how hot or mild you want it)
2 tbs soy sauce
2 tbs sugar
2 tbs vinegar
Juice of one lime
1 tbs sesame oil
? tsp fish sauce
? c. peanut butter
? c. water
**Once it?s all blended, pour over chicken mix and toss to coat. Chill for a few hours.

Red, White, & Blue Trifle:
2 tubs of thawed cool whip, one angel food cake (cut into cubes), one small can of crushed pineapple, fresh sliced strawberries, fresh blueberries, 2 packages of vanilla pudding mix.
Blend your cool whip with the pineapple and pudding mix. Layer cool whip, fruit, and cake until dish is full. I usually decorate the top layer as a flower or some other pretty design with the fruit. It is so easy, but sooo good. And I always just bring home an empty bowl.
