I got nothing. I need to shop probably after the afternoon nap. It will probably include lots of veggies because we have eaten horribly recently. What are you having?
I haven't figured anything out yet, but I have lots of vegetables from our CSA box that I need to use. Kale, swiss chard, zucchini, summer squash, and other various things. I have pork chops to use so, we'll see what I come up with.
Just found a new blog, ambitiouskitchen.com. Everything looks delicious and inspiring, and she has some healthy but yummy recipes. This week so far I am making a strawberry/goat cheese/quinoa salad over baby spinach with diced chicken and goat cheese chicken meatballs over spaghetti squash with zucchini, tomatoes and fresh basil. Also going to make my LO some chili. I am running out of ideas to stock the freezer for him, and anything with beans is a big hit, so non-spicy chili it is.
Honestly, that will probably be the extent of my cooking for the week. My husband is busy all week with an in-town firefighters convention so probably won't be home for dinner much, and when he is finally done he can take me out to eat.
I was Thinking sweet baby ray's slow cooked chicken sometime this week. Found that recipe yesterday. Possibly empanadas later this week. Paella with salmon. That's all I got.
If I ask dh he says Mongolian chicken or beef. Every. Single. Time!! Christian says macaroni. They're no help.
For tonight probably pasta.

We are leaving for vacation Friday, but have to get our house ready for DS's birthday party before we leave because he turns 1 the weekend after we return and I don't want to have to rush to get everything ready after we get back.
For that reason we are having cheap/quick/easy to clean up after meals this week.
Hot Dogs w/ chips, Ham and Cheese Panini, Chicken Quesadilla (using Tyson?s pre-grilled chicken strips), breakfast for dinner.
Next week we will be better, eating lots of fresh baked/broiled/grilled sea food with fresh veggies while we are on vacation on the gulf coast.-

Tues: Oven fried chicken with greens and black eyed peas
Wed: Grilled salmon, brown rice and fresh veggies
Thurs: Crispy chicken strips with creamy macaroni salad
Fri: blueberry pancakes
Sat: we are at a wedding
Sun: chopped summer salad.
Thank you fresh 20 for making a healthy menu for me. If I were in charge, it would be grilled cheese, spaghetti, tacos, and hot dishes every week.

Tonight I am just making grilled cheese with avocado and salsa added. I feel so tired, keeping it lazy tonight.
DH has a chicken soup stock going that we will likely use tomorrow, I might make dumplings.
I feel like making a pizza dough, not sure what kind of pizza I will make yet.
Havent planned well this week.

Just did our shopping trip today! All recipes are from Cooking Light or the new Cooking Light Gluten Free cookbook that I got from the library.
1. Grilled pork chops with nectarines and a bacon-herb salad
2. Steak with merlot-balsamic reduction, asparagus, and baked potatoes
3. Lemon-chardonnay grilled chicken, broccolini, and pasta
4. Burgers with our special burger sauce, fries, and salads.
Tuesday grilled turkey burgers and spicy sweet potatoe fries.
Wednesday I have a photo shoot so DH will be on his own.
Thursday pork chips asparagus and red potatoes.
Friday it's my birthday I'm not cooking!!
