I saw some baby food pouches that were various veggies mixed with greek yogurt. I thought that they weren't supposed to have any cows milk products until a year. Or, is it just that I can't replace BM with cow's milk before then?
I disagree. My first 2 kids had cows milk at 10 months old. Look up breastfeeding expert Dr Jack Newman, he covers this. My kids were on table food and weaned from BM, I did not want to do formula. At their year check ups they had no issues the concern is over iron, but they made up for it in food. I know what the AAP says, but I don't follow anything they say.

I am curious as to what the benefits of stopping BM at 10 months would be? I mean, WCM doesn't have the nutritional values BM or formula has, which is essential in at least the first year.
Reading some of his information on his site, I wouldn't take his advice on my life. He gives no reason why you can give a baby WCM as early as 6 months, he only states that you can (along with some other solids advice I really disagree with, like solids as early as 3 months), but that a baby can get their nutritional value quite easily through BM alone well into their first year of life. Which is the only part of that I agree with.

although I wouldn't take my kid off formula/BM before age 1, I don't think it would be borderline malnutrition IF (that is a biiiig if!) you can be sure LO is eating enough foods to fulfill his/her nutritional needs. I know someone who has 4 kids, 3 of which were eating all table food and off formula by 9-10 months. They were very healthy, but the mom worked as an child nutritional specialist before having kids, and made feeding her kids a full time job

With my 2nd she was just so active and with table food eating started weaning herself. I never did baby food and start table food at around 89 months old depending on the child so they were getting nutrients. Also the fact that they were both walking at 10 months old is another sign they were very healthy. At 10 months old I had no desire to put them on formula and upset their stomachs until I found the right one when I could just give them healthy food.

Totally agree. If you can't BF for that long then go on formula to ensure he or she is receiving the nutrition he or she needs. I know consumption will decrease as the baby moves to eating more solids but should not be weaned completely until at least one.

It doesn't make sense to me to avoid giving formula because you'd have to find one that "doesn't upset their tummy" but give cows milk?! Why would formula that is made to provide 100% nutrition to tiny babies in the absence of available breastmilk be "lesser than" cow's milk?! I also got pregnant when my first was very young, and had to supplement. He had breastmilk only until 6 months, breastmilk and solid food (he eats/ate what we eat, no purees) until 9 months, formula, breastmilk, & solids from 9-12 months, cow's milk, breast milk, & solids from 12-22+ (he's 22 months now and still nursing). I would not give cows milk before a year. No way, no how.
However, IN something...yogurt, baked goods, etc - totally okay.
Eh, I don't know...a couple of my kids went to cow's milk in sippies around 10m combined with light nursing and table food and one of them has always refused milk altogether. They all have a healthy, varied diet and are fantastic eaters. My boys are one formula now and I can't WAIT to switch them to goat's milk around 10/11m. Flame away...raising kids is a family-by-family thing and our pediatrician thinks they're doing fine. No biggie.
