I've been really strict about my diet and having my numbers under the threshold. Today I splurged and had a 1/2 sandwich, chips and a cookie. I haven't had a cookie in almost 2 months but I was really craving one today. I tested my 2 hour number and it was 173. Do you think it'll be ok to have one bad number in weeks? I plan on eating straight protein for dinner to offset it.

I feel your pain, but unfortunately you can't balance it out later in the day. I would suggest eating a massive amount of protein anytime you want a sweet. For example, eat some beef jerky before eating a cookie. This seems to work well for a lot of ladies. Additionally, if you can walk for 30 minutes after your meals, it will help with your #s.
173 seems very high, especially for a 2 hour #. I have test 1 hour after the start of a meal, and 2 hours seems like it should give your body more time to recover.
Also, I have to avoid chips and french fries. I actually do better with ice cream and cake than with chips. If you don't eat them normally, that could be what caused the spike.
One high # isn't the end of the world, but don't make it a habit.

My dietician actually told me that I didnt have to stop my life totally and that one bad number wasnt the end of the world. She told me to note in my logbook if I knew that I had a splurge so I could correlate that with my high reading.
For example, my numbers are all very good, and today I was thrown a surprise baby sprinkle. They ordered the cupcakes before I was diagnosed and they were so pretty that I allowed myself a small one, with a bean salad and raw veggies (nothing else from the food selection!). My 2 hour number was 138, which is 18 points over my allowable. I marked down that I attended my shower in my log so that they could attribute the spike to that. BUT ... that was a serious one off and I wouldnt do it more than once every few weeks at the max. Hope that helps!

this is exactly what mine told me as well. I have my baby shower tomorrow and she said it's fine to have a piece of cake and to just make a note of it. I wouldn't make it a habit though. my numbers were borderline to begin with so I don't know if that makes a difference but I would only do it once in a while and don't stress about it. it also helps to walk/exercise right after.
