I tried once! Unfortunately, it didn't work. I thought all the protein from the meats and cheese would balance the carbs from the bread, but no such luck.
I have had a turkey sandwich on whole wheat bread (just turkey, lettuce, provolone) from a local deli with French Onion Sun Chips and my #s have been fine.
I think there might just be too much fake stuff in Subway's offerings. That being said everyone is different, so Subway might work for you.
I get 45 g carbs at lunch and dinner. Subway has been perfect for me! I always get good numbers.
According to what I read of the nutrition info one six inch is 45g carbs.
Anyway, i order a six inch wheat, double meat, which I like the ham, but I think any of the meats would be fine, subway's ham is made of turkey, true fact! Also, white cheese, lettuce, onion, cucumber, mayo and or ranch and salt and pepper.
Honestly, I really like going there because i don't have to stress about what I am going to order and I love subway.

I did a flat bread tuna with lots of veggies and avocado last week and had a 145 reading after one hour, which was slightly high, but I thought decent for eating out. MD didn't seem concerned.
My favorite was a 6" on 9 grain wheat - roast beef, provolone, mayo, salt/pepper/oil/vinegar, and loads of veggies (tomatoes, pickles, lettuce, olives, onions). Sometimes I'd double the meat or hollow out the top of the bread more, but it usually breaks down to 3 carb servings. My 1 hour numbers were usually around 95-110.
According to their calculator it breaks down like this:
