Gluten free birthday cake

Anyone know of a good cake recipe that is gluten free?  I'm in charge of my godson's 1st birthday cake and need some ideas!

  • So my SIL recommends the Betty Crocker Gluten Free Mix...either brownie, cookie or vanilla cake.  If you use brownie, she suggests that you double the recipe.  

    Not sure if you were looking for recipes from scratch or not.

  • The Betty Crocker mixes are actually good!  If you are okay with a mix, that is.  I use them all the time.

     If you want to go homemade, the book Cooking for Isaiah (by Silvana Nardone) has a chocolate birthday cake recipe that is GF and dairy free.

  • The Betty Crocker mixes are really good! My FIL has celiac so we are very familiar with gluten free food!
    There is a recipe book called BabyCakes: Vegan, Mostly GlutenFree, and Mostly SugarFree Recipes from New York's Most TalkedAbout Bakery.
    I ate cupcakes at their LA bakery and while the Red Velvet cupcake was nasty, the banana was divine. It might be worth checking your library for a copy!

    I'm going to go with Betty Crocker. She's my home girl when it comes to baking. I didn't know there was gluten free options.

    There's a blog called Gluten Free Goddess that is filled with all kinds of GF recipes.

  • You can buy Bobs Red Mill gluten free cake mix in chocolate or vanilla. They sell it in stores and on Amazon, I haven't tried the cake but I have tried brownies and cornbread and its pretty damn good!!!

    Buying a mix is probably less expensive than buying the expensive gluten free flours some of them are not that good for baking either, it's not really a one for one substitute.

  • The Red Mill stuff is pretty good but if you're not used to GF baking, the Betty Crocker mixes are easy and very simple to use if you're not used to the different textures of GF baking.  Also, they're yummy.
