To be honest, we aren't baby proofers. But we do have some of these, and they are amazing. Even though they are out of reach, I still have extra piece of mind that they won't get into anything hazardous.They make a couple different sizes.
I think that sounds good. We've only done outlets, furniture, and one latch on the cabinet under the sink. Other than that I keep my bedroom door closed unless I'm in there with him. DDs door is closed because of te choking hazard of all her little toys unless we're in there together. And the bathroom since he loves to stand at the tub and I'm worried he'll try to climb in and hit his head on the hard porcelain if I'm not there.
I keep the bathroom and my bedroom door closed, moved cleaning stuff to a higher cabinet, and I'm considering getting a baby gate for the kitchen because he's somehow figured out how to open the refrigerator.
That's all I plan on doing at this time.

We have three floors so he's not really left alone anywhere except the downstairs den. Down there we have baby gates blocking access to other rooms/stairs and we put the ottoman in front of the TV stand, which works for now, but won't always. If I'm in the bedroom 4 feet from his nursery I might leave him on the floor while he plays and I can peek in. I've elevated all chemicals (alcohol, lotion, etc.), but once he's walking I'll probably put them in the nursery closet with a latch on the doors.
He won't be in the bathroom or our bedroom unaccompanied, but I'll get latches for the toilets, cabinets and straps for our dressers just in case. No reason to be in the guest room. He's not in the kitchen unaccompanied, if he's in the dining room he's in the high chair, and we only use our living room with guests over or if it's winter and we're using the fireplace. I'll probably have to eventually get something to cover the fireplace bottom if he were to fall and lock the fireplace.
Im thankful that we don't have an open concept house. It's so much easier to keep J out of the kitxhen. When he starts walking we might get a gate to block him from going to the hall/kitchen. Right now he has a big gated play area I put him in when I need to get something done.
Edit to add: you named mostly everything.When they get older maybe covers for knobs on stove if yours is gas. The kitchen is such a fascinating place
