I have been going through this lately with my son as well so I feel your pain. Thankfully babies really don't know what is boring and what isn't food wise so repeating the same meals over and over to them is no big deal.
That said, I couldn't stand it either so I still gave DS his puffs and cherrios, yogurt drops, watermelon (with a high water content it was just another way to get liquids in him), chicken chunks from a can on chicken noodle soup, I boiled some chicken broth and used that to make the rice (little extra flavor), saltime or ritz crakers, dipped the toast in applesauce, mixed a fruity baby food with rice for something different, I even snuck a grilled cheese sandwich in there...stuff like that. I was also giving him Pedialyte, and mixing his formula with Smart water for the extra electrolytes. He is improving and almost back to normal now.
Hope this helps give you some extra ideas. I figure if there isn't any solid food going in him, I certainly won't get anything solid coming out.

In the "for what it's worth" category, our Pedi told us at our 9 month check up that we can feed him anything we're eating, so we haven't held back. We let him try a little of everything and just make sure to keep the pieces small. He told us we don't want to get in the habit of making a "special" meal just for him, so we're not.
Speaking as someone with an inflammatory bowel disease, when you're sick, BRAT isn't boring, it's wonderful. It's what allows you to eat without pain and avoid the hospital. Just because you, as a healthy adult, think it's a limited diet doesn't mean your LO feels the same way.
Try to avoid dairy if it all possible (including yogurt and cheese) since it's a common trigger. If you're looking for other foods to add in slowly, check low-residue diets. Avocado can be a good choice. Broiled plain chicken is also an option.
From what I understand the BRAT diet isn't just a bland/boring diet, it's also a binding one. Meaning these foods help tighten up contents of the belly, thus reducing diarrhea. I know when my DD started eating bananas she became terribly plugged up, and I skipped rice cereal all together and went straight to oatmeal because I had heard of it constipating babies. Apple juice is more of a laxative but apple sauce and whole apples contain the pectins in the pulp and fibers which in turn make them binders as well.
Diarrhea for a week is terrible. Poor baby. Mixing foods with pedialyte and smart water is a great idea. I will have to remember that! And watermelon is so hydrating and yummy! Just be sure to keep that munchkin hydrated and don't worry too much about boring. Good luck, mama!
I would call the pedi. DD had vomiting and diarrhea but acting normal and she had rotavirus. She wouldn't eat at all and would only nurse which is fine. Diarrhea for a week is not normal and perhaps your LO should be seen.

FWIW our pedi doesn't worry about diarrhea (unaccompanied by other symptoms) until it has been going on for two weeks. Their thinking is that kids get lots of virus's.
