I cook dinner around 5 or 5:30 most days. DS plays by himself or helps me. At 3 he is actully a good little helper- messy but good
I wear DD on my back in the wrap usally while I cook. Other times she in in the jumparoo or having tummy time nearby. There are days where its just not happening and I go for an easy peasy meal last minute. I mean if we are just having an out of this world bad day I just do take out. Usally it works out fine though! DS loves to help cook and DD loves to be worn so I can usually make it work. I think you find your footing after awhile.
If we have a more involved meal I sometimes prep here and there when I have time. You may make friends with your crock pot as well, we love ours on days where I know I won't have time to make dinner. Just throw things in first thing in the morning and good to at dinner
Right now my daughter is only 5 months old, but my husband and I work together to get dinner done if she is acting up. We will probably do the same thing as she gets older. He loves to cook, so he really dosn't mind if he has to take over. Some days (if its an elaborate meal) I will try to get all the prep work done while she naps so that later all I have to do is throw it on.
I try not to cook too many nights during the week. I try to make a big cut if meat once a week or so like a whole turkey breast, ham, chicken, pork shoulder, etc. we eat off it twice fresh then I freeze it in individual portions enough for what we'd need for dinner. That means many nights I only have to cook up a starch/veggie and dinner is ready.
I also try to do easy meals a few nights a week like breakfast for dinner and pasta night with homemade sauce.
I usually only cook an actual full meal like 2-3xs a week. Right now my kids will just play together while I cook but when my youngest was 9 months I used the exersaucer for her while dd played. If they're being extra clingy ill throw on a tv show.
If it's a more involved meal I try to do the prep throughout the day, and then actually cook when DH gets home and can take DD for a bit.
If she's having a rough day, I'll usually go with something simple that doesn't involve a lot of work. DD is pretty good about playing by herself though, so it's not as hard for me to get dinner going.
I prep throughout the day when DS is napping/in his exersaucer, etc., like peel potatoes, chop veggies, make salad, etc. When it's getting close to dinnertime I usually just need to turn everything on to cook. Or if I'm making a casserole or something like that I prep it when I have time during the day then just pop it in the oven.
I cook dinner when DH gets home from work. We typically sit down to eat at 6:30 or so. If you don't have that option, I would prepare what you can during naps and then throw it together (or in the oven) before you eat. You could always wear baby as you're making stuff too?
I gotta admit we order take out way too much! But on the days I brave dinner I just set my DD in her high chair, we have a clip on high chair so she is at the counter where I'm working. I give her a small snack or some toys and she'll hold out for a little bit while I am cooking. I gotta make quick, easy meals.
I usually do the make ahead freezer meal thing. About once every two months I take a whole day to cook (usually a day when DH is home). Then each day as soon as he get's home and can take over kid duties I heat up a pre-made main dish and make a vegi side dish. That's usually around 6:30ish.
Right now I use the Once a Month Cooking book. But I have to substitute a lot because I like to use fresher ingredients. But, I also don't like cooking, so I'd rather get it all done at once.

My DH watches LO if he can, other wise I just do it.. she is pretty good at occupying herself (she's 14 months) But it's usually around 6PM I start cooking, we usually eat around 7 and LO is in bed around 8. One of us then does kitchen clean up while the other does LO's bath time.
Just curious, but what do your kids eat if you don't make supper until after they are asleep??

The baby still eats purees. The 3 year old eats leftovers from last night. They both get tubs around 6:00 and the baby is in bed by 6:30. So, to actually make and eat dinner between 5:20 (when we get home) and 6:00 just isn't happening.

If I'm doing a crockpot meal, I usually put it in around 2 so it'll be ready by 6. If it's not a crockpot meal, I try to time it so it's done around 6, so it just depends on what we're having. I started yesterday around 5:30 but it was just reheating frozen spaghetti sauce, boiling noodles, and washing/prepping asparagus for the oven.
Luckily DD likes to bang things on our coffee table and use her pushy walky toys around the living room while I cook. If I think that she is going to be curious, I put her in the exersaucer and give her a hand full of cheerios, and we "talk" while I cook. This way, she is entertained, and I know that she is safe. (She is always in the same room with me whenever there is any food introduced. I am paranoid about choking.) Also, I find quick and easy recipes. And, like PP's said... the crock pot is your friend.
DD doesn't nap anymore, but when she was younger I'd sometimes work on some prep work during nap so there was less to do later. Now she sometimes helps me in the kitchen, sometimes will watch a show if the cooking is more involved and often needs help in the bathroom just as I'm knuckle deep in raw meat. LOL. I don't usually start cooking until after 5:30 and my goal is food on the table by 6/6:30. I make crockpot meals about once per week. We're adding a new baby in the mix next month though, so I imagine it will be much harder soon.

During nap, then heat it up later. I could cook with my kids awake, but I don't find my kids or cooking as enjoyable that way.
We also do a lot of picnics at the pool over the summer.
