My son started out so well, eating just about any veggie or fruit I put in front of him. Now that we're getting into the stage 3 foods, he's decided to get picky. I haven't had any luck with stage 3 foods or meat in general. In fact, some things he dislikes to the point of gagging, and then makes himself throw up.
Help! I'd like it if he could feed himself some day!

This.
My DD hated baby food unless it is the very thin starter food. She would do the same thing, gag until she vomited. We went right to table food after that and loves to feed herself.

Have you tried just feeding him real meat? That baby meat is nasty. My son gagged and I did too. It smells like dog food.
He loves fish, pork tenderloin, chicken and steak. We just cut it up in very very small pieces and feed to him. I quit buying the pureed meats and such. I do still buy pureed fruits that are handy to have in the diaper bag if we're out and about.
This is rather forward... Geez. I bothered with stage 3 foods because I obviously didn't know any better. How nice of your pedi to save you the hassle... mine didn't.
He does eat table food. I wanted to get him to take some stage 3's as well to make sure he was getting enough. Quite a bit of the table food ends up in his high chair or on the floor.
