I've come to the conclusion

That I eat like crap. I knew I didn't always eat the best but it has really hit me how bad my diet it. I want to just cut up some of what ever is on my plate for Jack to eat but I'd say 3/4 of the time I don't think its healthy enough for him so I end up cooking a small portion of veggies for him. Mean while i'm over hear scarfing down pizza and other misc crap food.

 

So starting today I'm making a resolution to cook and eat healthier!

Does anyone have any good recipes they would like to share?

  • I worry about this too! Landen is starting to eat more and more "real" food, but I'm hesitant just because with the baby food I know he's getting his fruits and veggies!

  • I am in a total recipe funk.  But I do make a lot of pasta with sauce dishes, which the kids, including Emery, LOVE, and the sauces have lots of veggies.  Chicken and rice dishes are easy too. 

    The thing I do thats most helpful for me is try to always have healthy snacks on hand for between meals.  Sugar snap peas, grapes and cheese, strawberries, apples and peanut butter, etc.  That way I grab for the good stuff instead of the empty calorie stuff and I'm not STARVING before dinner and make poor choices.

  • I honestly put everything in the crock pot. I'm infamous for sticking like 2 lbs of chicken breast in there on Monday with a little but of low sodium soup and mild seasoning and using the chicken for a few days. The trick is to keep keep it moist in there without getting it to the point of shredding. I'll use it for LOs meals, with pasta (try veggie noddles with a red sauce), as grilled chicken with rice and veggies, with chicken fajitas or even into a soup. I feel as if simplifying the main protein dish has always helped me instead of covering it with breading or cheese or stuffing it.

  • I can't remember if it was on this board or parenting, but someone was talking about cooking " en papillote" the other day...in parchment.  I take a piece of parchment paper, layer veggies ( thinly sliced onion, mushrooms, peppers, cherry tomatoes, zucchini....anything, but these work well), then lay a piece of chicken or fish on top, drizzle with olive oil and spices, fold into a little packet and bake at 375 until cooked through.  Usually around 25 minutes depending on what it is.  You can add lemon slices, fresh herbs, whatever.  Sometimes I add feta and Greek olives.  I usually do a whole wheat couscous or quinoa, and just dump the packet on top because it makes a nice sauce.

  • CLeigh's blog, a life from scratch, always has healthy yummy stuff on it, and I love, love, love skinnytaste...obviously you're not dieting, but her recipes are healthy, just use full fat dairy instead of low fat and don't skimp on the olive oil and butter...yummy!

  • I don't have any recipes but I did notice the same thing, I make DS a different meal because mine is just junk food.  Its awful.

  • There are tons of recipes online at places like foodnetwork.com, and stuff like that. A lot of them have ratings on how well you think you can cook ie beginner, intermediate, etc.

    I also agree about the crock pot... that sucker is your friend, and makes your house smell amazing.  Plus, it is cooking on easy mode.  Throw a bunch of ingredients in the pot, set it on high for a few hours, and you come out looking like a domestic goddess. Not to mention, you get to pick what goes in there, so you get to monitor what kinds of food your family is eating.  Kind of a win-win there.
