What's for dinner?

I'm not sure what I want for dinner, so I was seeing if any of you ladies have some great recipes? Or crockpot for another day

    Black beans with brown rice, Salvadorian cream (their version of sour cream), avocados, tomatoes and cheese.  I'll pair it with a veg of some sort and corn pancakes.  It's one of my favorite dishes from a particular restaurant back home and I'm trying to recreate it.  Plus, it'll be a nice change from the smoked meats we've been eating all week.  DH smoked ribs, brisket and a chicken on Sunday.  I'm going to use Tyler Florence's pressure cooker bean recipe for it.  Supposedly it takes 45 minutes to go from dried, unsoaked beans to done.  I'm totally curious to see if it really works!

    DH has a meeting tonight so I whipped up some cold chicken salad last night...I knew it would be easy to throw it on some bread and eat while at home with LO tonight....he has an ear infection and screams if I he isn't being held!

    I have to admit that I had to go look those up!  No, they're not the same.  This is really just an American cornbread recipe that they make into pancakes.  I usually order the ones with jalapenos in them, so I'll make some like that, too.   However, for future dinners, I'm going to check out arepa recipes.   Those look good!

    I promise you won't be disappointed. My grandma makes them and they are my favorite. :

    We're out of town so no cooking for me this week, I'm fully enjoying eating out and having others cook for me. Last night we had a rotissorie chicken from Costco with some mushroom risotto that my mom made. I'm affraid of tomorrow night because MIL is cooking and she's a terribly cook... maybe she'll  decide to do take out instead? [Wink
