Belated GTKY monday: Baking!

Sorry we skipped GTKY last week due to holiday Monday, and I'm way behind this week.  Anyway, I know we are probably too busy to bake these days, but if you still have time to do so...  (and I know TJ will love this week's GTKY)

1) What do you like to bake most - cakes, cookies, yeast bread, quick breads, muffins etc?

2)  What did you bake that you were most proud of?

3) If you are going to a potluck and you're bringing dessert, what will it be?

4) How much did you bake before LO was born, and how much do you bake now?

5) What's the last thing you've baked?

6) Anyone here bake yeast breads? Any tips for me?

    1) What do you like to bake most - cakes, cookies, yeast bread, quick breads, muffins etc?

    Cakes and cookies are my favorites. I would love to do more breads! I also love baking pies, everything from scratch, but I don't have the time these days.

    2)  What did you bake that you were most proud of?

    Monster Cookies are always something I get asked to bake, especially for DH's coworkers.

    3) If you are going to a potluck and you're bringing dessert, what will it be?

    Simple sugar cookies or an apple pie.

    4) How much did you bake before LO was born, and how much do you bake now?

    I used to bake at least once a week, and it would last us a week. Now I'm lucky to bake once a month.

    5) What's the last thing you've baked?

    I don't even remember! Probably monster cookies since the last thing we went to was a party for DH's boss.

    6) Anyone here bake yeast breads? Any tips for me?

    I do not bake yeast breads, I want to though. I absolutely love homemade yeast bread!

    7) optional - share your favorite recipe

    I don't have one with me at work and a lot of my cookie recipes, I don't even follow anymore.

    Cupcakes! I love to try new flavors (like maple bacon beer batter cupcakes) but I also love the basics, like chocolate with buttercream.

    Probably the maple bacon beer batter cupcakes or a pumpkin carrot cake I've made a couple times.

    3) If you are going to a potluck and you're bringing dessert, what will it be?

    Depends.... usually chocolate cupcakes, but if it's fall, I have to make pumpkin cupcakes.

    4) How much did you bake before LO was born, and how much do you bake now?

    I baked all the time, but once I got pregnant I was too tired LOL... I'm hoping to start back up again (while trying to lose weight... yeah)

    5) What's the last thing you've baked?

    I made MIL chocolate cupcakes with dark chocolate frosting for her birthday last week.

    6) Anyone here bake yeast breads? Any tips for me?

    Haven't ventured too much into breads

    I feel like it's kind of a cheat because it starts with a box mix, but people love it and it's quick and easy, so I don't care :) I also add semi sweet chocolate chips. When made as cupcakes, they should bake 12-15 minutes.

  • mnj05, what are monster cookies???

     1) What do you like to bake most - cakes, cookies, yeast bread, quick breads, muffins etc?

    I'm not a good baker, so I usually stick with quick breads and muffins - they are essentially foolproof. 

    2)  What did you bake that you were most proud of?

    I once made Chinese coconut buns.  I love these buns though one can get them at Chinatown bakeries for like 80 cents, so it's not really worth the trouble to make it myself, except that I can't get to Chinatown that easily. 

    3) If you are going to a potluck and you're bringing dessert, what will it be?

    Summer berry cake 

    4) How much did you bake before LO was born, and how much do you bake now?

    I probably baked couple times a month (less in the summer).  Now maybe once a month if I have time 

    5) What's the last thing you've baked?

    It was YESTERDAY!  I made 2 dozen PB cookies (peanut butter, not my screen name LOL). 

    6) Anyone here bake yeast breads? Any tips for me?

    I used to make Mark Bittman's no-knead loaf, but it never came out that good, so I stopped.  I don't have a standup mixer so I was hoping for success with no-knead method.  However, I do make yeast bread rolls sometimes.  I baked a ton before M was born, but haven't had time to make them since.

    I baked my husband a lemon berry mascarpone cake for his birthday. It was sooooo yummy and looked really pretty!

    A coconut poke cake!

    Not too terribly often...just if we were having a potluck at work or with friends. Once every month or two?

    5 What's the last thing you've baked?
    Probably a coconut poke cake. It's been a while.

    6 Anyone here bake yeast breads? Any tips for me?
    No help here.

    Coconut poke cake
    Box of white cake baked following directions on box
    While baking, mix a can of cream of coconut with a can of sweetened condensed milk
    As soon as you pull cake out of oven, poke a bunch of holes in the top. I use the end of a wooden spoon
    Pour the cream of coconut and sweetened condensed milk mixture over the top.
    Once it cools, top with cool whip and then sprinkle the top with shredded coconut. It's best when it's been refrigerated. Yum!!!

    This is the recipe I go off of, but you can add just about anything you want. It's so easy, makes a ton, and is always a crowd pleaser! It's so gooey in the middle.

    I think I would say cakes. I can get the most creative with them.

    What did you bake that you were most proud of?
    My BFF's wedding cake. Lemon cake with real raspberry filling, lemon cream cheese frosting roses, and decorates with fresh flowers.

    3 If you are going to a potluck and you're bringing dessert, what will it be?
    Probably cupcakes. I'm really into fruit pies and cobblers though for the summer.

    4 How much did you bake before LO was born, and how much do you bake now?
    Usually only once a month since they are usually big projects. Now? I bake something small every other week and have only done a few big projects. I'm saving up for E's first birthday!!

    5 What's the last thing you've baked?
    Blueberry cobbler this weekend.

    6 Anyone here bake yeast breads? Any tips for me?
    As much as I love to bake, I have never ventured into yeast breads. I thought that was going to be my maternity leave project, but I turns out that goes by too quickly and it's hard to learn yeast with a baby attached to your boob 24/7.

    There's no way I could type a recipe on mobile. But my fave new trick is to make a scratch apple pie and swap out 2/3 of the apples for pears. Mmm, so good!

  • I don't know how to quote and make answers bold, argh.

    Anyway, my favorite thing to bake is brownies. The last thing I baked, which is what I would bring to a potluck, is Ghiradelli brownies, because the only thing I've ever baked from scratch is a cheesecake...which was pretty awesome but now I'm too lazy.

    I would like to have the desire to bake more things, though.

    I dislike baking, but fav would be cookies or muffins.  

    2)  What did you bake that you were most proud of?

    Funny story, when I first met DHs extended family, I brought cheesecake (it was family vacation and I needed something that would ride 4 hrs in the car). I made it using the recipe on the back of the Philadelphia cream cheese box and Pre-made graham cracker crust. To this day, they all rave about it nearly 10 years later. I've done a few encores, but I hate cheesecake and I'm not motivated.  

    3) If you are going to a potluck and you're bringing dessert, what will it be?

    I try to avoid bringing dessert, but maybe cupcakes? 

    4) How much did you bake before LO was born, and how much do you bake now?

    Ive made brownies once.  

    5) What's the last thing you've baked?

    Brownies.  

    6) Anyone here bake yeast breads? Any tips for me?

    Um...there is an amazing bakery walking distance. Go there :)

    The perfect cookie! 

    Get stroller and pooch.

    Walk 1/4 mile.

    Buy salted chocolate chip cookie

    Break off non-chocolate pieces to share with cute pooch.  

    Get an extra for later.

    Eat both on the way home.  (oops!)

    Second u/s, 176bmp! Kicked over to the OB by the RE at 8w. Team Green!! 
    Baby girl J arrived two weeks early! Born into water, med-free. Hooray for Team Pink!

    TTC #2 - back to the RE, treatment started 12/2014.

  • Am I the only non-baker in the bunch??

    I do bake cookies during the holidays and that's about it. I didn't even do that this past Christmas (we were in the process of moving) and I honestly didn't miss it (though I did miss the annual cookie exchange, which made me sad).

    2)  What did you bake that you were most proud of? I make a mean chocolate chip pumpkin bread- plus I use whole wheat flour and flax for a health boost!

    3) If you are going to a potluck and you're bringing dessert, what will it be? Summer- something no bake, like Berried Treasure (to die for), all other seasons- either cream cheese brownies or some type of cookie

    4) How much did you bake before LO was born, and how much do you bake now? Lots! every other week at least, now more like once a month

    5) What's the last thing you've baked? Lactation cookies haha!

    6) Anyone here bake yeast breads? Any tips for me? No but I just found an awesome recipe for sweet yeast dough - to make like cinnamon rolls and danish, looking forward to trying it out

    dx: MFI 0% morph & low count. Occasional Anovulatory cycles.
