Monday: brown rice, leftover Cajun grilled chicken which I'm going to dice and throw in a skillet with lots of onions and tomatoes.
Tuesday: DH is working, quesadillas, baby carrots, and watermelon.
Wednesday: date night!!
Thursday: crock pot night, making something with ground beef but I'm kind of out of ideas.
Friday: Broccoli scramble or crust less quiche.
Saturday: grill out
Sunday: dinner at my mom and dads farm.
ETA: I forgot to answer my own question!! It would have to be what my mom cooked last night. Grilled steak, jumbo shrimp, and chicken, corn on the cob and a salad!

But I have a new favorite summer meal. It's called summertime spaghatti. Its chicken veggies, a very light oil and parsley covering. It's super yummy and nice and light. I have the recipie if anyone wants it:-)

I'm so over cooking that tonight i am using the crockpot. it will be island terriyaki chicken with veggies and rice.
Is this with pineapple? I was just getting ready to post and ask if anyone had a yummy recipe for crock pot chicken. I saw a recipe that looked yummy with teriyaki and crushed pineapple a couple weeks back, but not sure if this is the same thing.....
If anyone else has a similar recipe to share, that would be great!

I'm meal planning and making my grocery list now. I totally slacked last week with various combinations of grilling burgers, hot dogs and corn, and pasta salad and various leftovers.
My favorite summer recipe is pasta salad (NO MAYO! HAHA!). I cook a half pound of rotini and chop up a ton of veggies - usually carrots, green pepper, cucumber - and mix with italian dressing, vinegar, and grated parmesan cheese. It keeps for a few days and we eat it as sides with dinner or for lunches. So good and refreshing! If we have it, I add in some chopped pepperoni. Mmm.
Monday: pulled pork sandwiches with homemade coleslaw
Tuesday: veggie loaded spinach salads with grilled chicken
Wednesday: Italian sausage and pepper rolls with sweet potato fries
Thursday: spicy ground chicken lettuce wraps, a PFChang copycat recipe
Friday: slow cooker BBQ ribs, twice baked potatoes, corn on the cob
I've stopped meal planning for the weekends, because we always end up making last minute plans.
We're having my favorite summer meal on Tuesday! Spinach salads with cucumber, cherry tomatoes, sugar snap peas, mushrooms, red onions, chick peas, green olives, hard boiled eggs, croutons and grilled chicken with homemade ranch dressing. If I have any other veggies, they get thrown in there, too. So fresh and delicious!

Mine does not have pineapple but it could easily be added. I take some chicken breasts and pour in half a bottle of Soy Vey ISLAND Teriyaki. You could use any teriyaki but an island flavor is best. It has pineapple juice in it. The last 30 minutes I dump in a bag of Asian veggies. That way they steam but are still crisp like a stir fry as opposed to mushy.

Awesome, thank you! I have some TJ's Island Soyaki, so I just threw this together. I was planning to stir fry veggies on the side, but LOVE your idea of dumping them right in the CP. I had no idea that would work, I am def giving it a try tonight!

Tonight we're having chicken chow mein. That's about where the planning stops for the week. I've really slacked off on menu planning.
DD is sick too and not eating much which is really cramping my motivation for cooking. That, and she still won't eat a d@mn vegetable.

tomorrow is braised shank steak, carrots, peas and roasted potatoes
Wednesday is fava bean and pancetta pasta
Thursday is diatilli chopped salad
